There is a good chainsaw carving school in Wisconsin. They have a web site. I went to it back in 2005. Learned a lot in a short time about carving bears and eagles. Back then they only took about 5 carvers at a time.
You do make it look so easy. No false moves. Do you have the blueprint in your headI? I try carving, but i have never been able to attain the fluid movement that you good carvers seem to execute . Maybe some day. Excellent video.
Good vid enjoyed it..however ...at least during filming probably ought to have somthing other than just a t shirt , jean's and a straw hat on . Gloves, ear , eye protection..chaps.
I use a 435, 16in, to block with and whatnot. Then switch to ms170, 12in carving bar. Most better prepared have more saws, larger carving bars that make saws even lighter for the blocking etc..

Take a local chainsaw safety course. Other than that I think you just gotta dive in and give it a shot
