Basically a mix of Water, Salt and flour. Most chefs do not tell their own recipies, but a basic one is this: 2 cups of non-bleached all purpose flour. I used Gold medal brand, premium quality flour (1.5 teaspoon less than 2/3 cup) of water 1/2 teaspoon salt olive oil as needed Or a more complex one: 156g cake flour 25g all-purpose flour 110 mL warm water 2g salt (1/3 tsp) 1 g baking soda (a little less than 1/4 tsp) ~ 6 g vegetable oil (optional) You can also bake the Baking powder (Handle the result with gloves!!! This can cause skin irritation). The main trick is to kneed it repediatly and letting it rest. You want it to be elastic and plastic to a degree. Basically: Formable, but springy.

I think they use a extruder in Japan to make Ramen. But I know that cuts soba with a knife.

Flour, water and salt. Salt is the most important because it helps align gluten and make it much more flexible
