      can you now create this noodle all by yourselfie?......i've watched. i've been astounded. 3 minutes of hand-pulling Chinese noodle wisdom with no knife in sight, but......i canNOT. .....LOVE it tho'.....

    I can tell you these kind of noodles are the best. Nothing like hand made noodles for lo mein and other dishes. I actually get my noodles imported from China.

    This my friends is how "ramen" or "pulled noodles" is really made. I'm surprised in Japan they don't really have this traditional technique. They make ramen the way they make soba, but just folding it in a pile and cutting out individual noodles.

      Thousand Word Moments ^^^ that is not true at all. The Japanese use alkaline Kansui water in their ramen-noodles. That is why they are yellow and kinky. There are 8+ different varieties in Japan.

      I think they use a extruder in Japan to make Ramen. But I know that cuts soba with a knife.

      Flour, water and salt. Salt is the most important because it helps align gluten and make it much more flexible

    In Island of Sardinia Italy they do a kind of pasta technically similar to Chinese noodles so called Filindeu.

    I've seen guys do it faster, but regardless of the speed of the technique, the moves still have to be incredibly clean to do this properly. I know that I can't do it at all.

    noodles made that way must be very elastic and good... there are more methods to make nodles... but, this method will guarantee the elasticity.... hmmm im hungry

    I tried pulling noodles for the first time. Img my dough was so hard and it was crumbling. And i added more water and it was just no it was so tough.
    I wish there was a proper noodle pulling tutorial out there.

    Do you know what's the recipe to make this noodles ?

      Basically a mix of Water, Salt and flour.
      Most chefs do not tell their own recipies, but a basic one is this:
      2 cups of non-bleached all purpose flour. I used Gold medal brand, premium quality flour
      (1.5 teaspoon less than 2/3 cup) of water
      1/2 teaspoon salt
      olive oil as needed
      Or a more complex one:
      156g cake flour
      25g all-purpose flour
      110 mL warm water
      2g salt (1/3 tsp)
      1 g baking soda (a little less than 1/4 tsp)
      ~ 6 g vegetable oil (optional)
      You can also bake the Baking powder (Handle the result with gloves!!! This can cause skin irritation).
      The main trick is to kneed it repediatly and letting it rest.
      You want it to be elastic and plastic to a degree.
      Basically: Formable, but springy.

      One does not need to be a master, to distinguish master from apprentice.

      Udon is easier to make, the last time i tried hand pulled noodles i ate large chunks of supposedly noodle strands 😂 they stick together too easily
