You got the order wrong. The Aroma cup is the Pinot cup (right cup). The pinot cup is actually barrel cup (middle) and the barrel cup is actually the aroma cup (left)
The aroma cup (left) is for more acidity, the barrell cup (middle) is for more sweetness, the pinot cup (right) is for balance, clarity and floral taste.
The different forms effect taste because they affact your jaw angle and how the liquid flows in your mouth and thus what part of your tounge is most in touch. The armoa cup has the fastest flow and hits the back and sides while the barrell has the slowest flow that hits the tip of your tounge the most. The pinot again has the widest flow that hits your tounge equally while also enhancing the smell as it captures your nose in the cup.
