I'm working on my noodle stretch and slap, the dough really needs to rest at least an hour so the gluten has time to develop, that's what keeps the dough pliable and able to stretch and slap, got the dough down, now it's the Stretch and Slap. Wish Me Luck.

I’ve gotten better with a new wooden roller, but it’s still not easy for me to make good noodles that way. I agree, I let the dough rest for at least an hour, sometimes 2, to develop the gluten. If I let them get too soft, I just add a little bit more flour. I also found you can use too much oil during the stretch and slap, which makes a terrible mess! Can I ask, what do you find to be the best flour to water ratio? Happy noodle making.

Food prepared out of White flour is a staple for you guys??? It's bad for health right? Can't there be an alternate for white flour? Use homemade flour, at least they won't be bleached.. What do you think?
I really wish people would stop passing along misinformation about nutrition. White flour, unbleached, isn’t unhealthy at all. And most isn’t bleached any longer, so don’t be afraid to use it! It’s especially hurtful when someone attacks a simple, very healthy recipe like this. There’s no processed ingredients beyond the minimal processing required for ANY flour or meal. More people should be eating like this, and this family should be praised for creating healthy dishes for the whole family. There’s little oil, no processed animal fats, lots of fresh vegetables cooked simply and good protein from the eggs.
