Never heard of scart cable in the USA. The way you showed it hooked up to the TV seems like the RF coax cable to us Americans. Just a different format cable but basically the same as a RF coax cable.
Any Americans watching. You would just buy the HDMI to RF modulator. USA TV's don't have a scart cable input.

Sharp? More like Blurry, HAAAA, GOTeeeem! Seriously, though, that Game stick contraption is quite jerry-riged, CRTs aren't supposed to be so blurry.
The TV Model is Sharp and they are excellet CRT's I've had that one since 2014 and It's from the 90's works like new
try ps4 or ps5 if you have them but probably you will need connectors/adapters for them and resolution could be problem too
The issue is with the converter box itself not the console being used
