Mayo! One advice.. always always always add jeera/cumin seeds in hot oil the first thing when you cook. Mustard seeds and cumin seeds are the first ingredients that are added in hot oil when cooking anything Indian! 😁
The idea is...heat the oil...once hot...then reduce the flame and then add mustard seeds first...after they crackle then add jeera ...take care not to burn jeera.
My mom says it is done so as to know whether the oil has reached the right temperature or not....they should turn brown....and crackle....if the oil is not at the right hot temperature....the fried item will smell a bit awkward and will have a different taste...not that good

Further to my earlier comment, just a couple of things: the 'mota samosa' with the thick pastry is the north Indian variety. These are bigger, thicker and definitely more spicy. The south Indian version of samosa has a wafer thin pastry (samosa patties or wraps are available frozen and ready made). The filling is different and the taste is more mild in the south Indian samosas. Second, you often mention in your videos about your inability to handle spice. Here is a tip: if you are ever faced with a lot of spice in your mouth which threatens to blow your head off, do NOT reach for water. It is no help at all. Capcisin does not dissolve in water. So if you are all watering through your eyes and nose with extra spice, reach for yoghurt. Just a spoon of cold yoghurt will cool the heat down instantly. Just try it the next time you eat a pack of pre-cooked upma (which you said was too spicy in that video). So if you are overwhelmed with spice, reach for yoghurt, not water. Enjoy!!
I didn't know about the difference of south samosa! Good to know! I know that water is not food for such occasions but but but..... it's hard not to drink water.....
@@mayojapan True, by all means drink water. But yoghurt is an instant fire extinguisher. So if you are overwhelmed with spice, cool it down instantly with a spoon or two of cold yogurt. You can drink all the water you want!
