Like their are no specified vegetables for it. I have tasted these pakora and they taste quite good. So, it's upto her and she mentioned she doesn't like green chilli coz in Japan people hardly eat any chilli..

Hi Mayo. Just a small tip. After peeling d onions, soak them in cold water for 2-3 mins, wipe them n then cut the onions. This step prevents tears while cutting the onions.

This is the first time I'm seeing India pakoras. ( Not Common in Delhi ) In India, they simply slice potatoes, dip those pieces in besan batter, and fry them. I'm writing down the recipe for Aloo Pakora.
Aloo Pakora Recipe:
Ingredients:
2 medium-sized potatoes
1/2 cup besan (gram flour)
1/2 teaspoon red chili powder
1/4 teaspoon turmeric powder
1/4 teaspoon coriander powder
1/4 teaspoon cumin powder
1/4 teaspoon garam masala
Salt to taste
Oil for frying
Instructions:
Wash and cut the potatoes into thin slices.
In a bowl, combine besan, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, and salt. Mix well.
Gradually add water to form a thick batter.
Heat oil in a deep pan (kadhai).
Dip potato slices in the besan batter and fry them in the hot oil.
Fry until the pakoras turn golden brown, then remove them and place them on a paper towel to drain.
Serve hot with green chutney or tomato ketchup.
Tips:
You can add other vegetables of your choice to the pakoras, such as onions, green chilies, or carrots.
Add a bit of chopped cilantro (fresh coriander leaves) to the batter for extra flavor.
You can add a little semolina (sooji) to the batter for extra crispiness.

Hi Mayo...While making Indian pakodas, the batter should be of semi- thick consistency. Besan acts as a binding agent. Your mixture was bit dry. Hence the veggies splattered separately in the pan. :)

You need paste like consistency.. of besan and the vegetables should be small in cut size..
Also chat masala is not needed..
Instead you can put normal green chilli small cuts in that

When you put pakora in hot oil, don't throw it into the oil quickly, just dip/ put the pakora batter in the oil slowly. Then the oil won't split
