Classic Almond Financiers | Fluffy, Tender With a Delicately Crispy Crust

  • You’ve seen cookies shaped like coins and money bag dumplings. What about a French almond cake that looks like a gold bar? Financiers look quite simple compared to other French pastries like madeleines and macarons. But once you’ve had a bite, you’ll realize how addictive they can get. Your whole tongue is coated with buttery, nutty goodness, but thanks to the thinness of the tender cake, it isn’t overwhelming. In fact, its daintiness has you craving for the next bite, after the next…until you’ve realized you’ve consumed half of the batch that just came out of the oven.
    To reiterate in short, financiers really pack a punch in richness of flavor. And that’s thanks to the fact that they are mostly made with almond flour and browned butter. My recipe is inspired by Maison Jacquemart, a French baking company that sells individually wrapped financiers at the grocery store. The soft little cakes quickly became my go-to treat for an instant dose of sugar and happiness. I knew that a freshly baked version would be even better, so I got my first financier pan and started recipe-testing.
    Like Maison Jacquemart, I prefer to add a bit of almond extract for an even more nutty marzipan-like flavor, and some baking powder for a fluffy texture. I’ve tested versions without the baking powder, but found I did not enjoy the denser texture as much. I’ve tweaked the amount of almond flour to make a tender yet sturdy cake that isn’t dry in your mouth. Finally, I bake the financiers until the tops are almost completely browned for a delicately crispy crust. And the best part? These financiers are done in less than an hour.
