What you'll need:
2 pork kidneys, salt and pepper, olive oil, 1 small onion, 2 cloves garlic, 3 tbsp white wine, 1/3 cup V8, parsley

One thing that goes unsaid in this video is that the "scent" of the kidneys leaves no doubt about their origin. For that reason, acidic sauces are always popular, even, dare I say, required. I usually choose a mustard sauce. Jacques uses tomato here, which is also really good. I don't want to rain on anyone's parade, but I do think people should know what they're getting into if they try this dish.
i.e. If you dont enjoy golden showers, you might not enjoy this.
Soak them in milk for a couple hours, and the offal taste is almost eliminated. Works for "gamey" venison as well
See, how can people even remotely think that is delicious? How can a pee smell be yummy even with all the sauces/spices etc? Makes no sense. Although I will try anything once especially if they say it tastes good.

@@clairebear0713it's easier when it was given to you as a child and you didn't know what it was, you just acclimated to the taste gradually and it became a delicacy. When I tried heart for the first time, in my 40's, it tasted like kidneys to me.
I love kidneys! Veal kidneys are delicious with a wine, shallot, dijon and cream sauce. My Mom made them for us like that as children, and now I often make that same recipe myself. I've never had pork kidney, but I will definitely try this recipe, thank you Jacques!
A local place serves what they call a 'kidney roll', which is a slice of toast with a big heaping scoop of kidney ragout on top, which is then breaded and deep fried. World famous in our town, and absolutely delicious.

A very underated cheap meal and as you say very tasty, I very often cook them in a stir fry as they cook to a lovely pink colour and stay tender and creamy (try them with a peanut butter, garlic and sweet soy sauce with vegetables, scrummy)

We eat quite a lot of giblets here in Turkey, not pork of course, mostly lamb and sometimes veal. Kidneys are my absolute favourite. Very tasty. You gotta soak them in water beforehand though so that they wont smell of, well, urine.
Lovely! I prepare it very similar, a bit more onion in general and some bay leaf and brandy apart from the wine. I try and buy heart, liver or kidney of whatever animal is available once a week. It's ridiculously cheap and great for your health. Not to mention that if you eat meat I think you should eat everything and not just the muscles.
I've never met this man, but I sure wish I could!! Would love to share a meal and a drink with him.

It’s ages since I’ve had any kidneys, and I’ve never had pork kidneys. Mum would serve kidneys with the occasional breakfast when I was a kid. I’ll certainly give these a try if my butcher has them. Thank you Chef Pépin

An unexpected ingredient, but one I feel like I have to try now! Offal gets overlooked, but in my experience, it's usually pretty tasty.
I was surprised I liked liver when I first tried it. I wasn't a fan of chicken hearts. But who knows, kidney might be even better than both of those. It looks pretty good how it was prepared here.
I grew up eating pork, beef, and chicken liver. We never ate kidneys, however. I'm going to try them as soon as I can find out where I can buy them. I live pretty close to some Amish farmers so I will ask them to let me know when they butcher a hog. I'm stoked!
BTW- The calves’ liver was sautéed in butter and oil with steamed veggies on the side ( herbs and butter) and tasted so, so, so good

With the exception of Uwajimaya, they are stocked in every Asian grocery store near me (Portland, OR Metro)

That was so different. I've been wondering how to incorporate more organ meat into my diet; things like liver and kidneys. I'm not sure I could do tripe or lung.... But I'm going to try this
Be adventurous! I don't like tripe and have never eaten lung but I've eaten pork brain with scrambled eggs. I liked them when I was a child. I haven't had any since I was a kid. But I'm going to get some! I believe we should not waste any part of an animal.
I love liver, so I'm interested in finding a butcher in my area that sells these. Chicken livers (my favorite) are pretty cheap, so here we go. New things. First cooking Chef's way, then maybe trying some English methods. I've always wanted to try steak and kidney pie for a brunch.
You may have to ask your butcher to order them for you. I have some on order from my local butcher.

organ meat is often thought of as gross but liverwurst and other things like brain are so tasty.
Absolute best place for kidneys is steak and kidney pudding! Look it up!

I will only eat kidneys when my mother makes them and she stopped cooking a year ago, so... I can say kidneys are indeed delicious, when prepared correctly.

Do these have the same texture as liver? I do like liver and the gizzards too, so I'm assuming I'll like these. Just wondering what it "should" taste like. Chef did a combined special with Ming Tsai, and did chicken livers in port wine and mushrooms...outstanding! I wonder if these kidney can be cooked the same way. I will try this recipe, just thinking ahead haha.
Kidneys and liver are very similar in texture and qualities when cooking, so yes.
I like pork kidneys better than the liver. Its kinda has a sausage taste to it imo. But I cook mine a bit more to be on the safe side.
In other recipes for kidneys i've read, there's always a soaking step involved, usually after removing the sinewy insides. This is ostensibly to cut down on a urine smell that they make when you cook them. Jacques doesn't mention that here. Is it not needed? or is that just folklore? or is it just what one gets for a quick evening meal of kidneys?
Soaking is really down to preference in my opinion, if you don't like the stronger flavour of kidney soak them, if you do, don't bother. Same with liver, and sweat breads, I never soak them personally, I like the strong flavour of kidney, or the ferrous iron of liver.

After a traumatic grandpa incident in childhood. It would take Jacques Pépin himself feeding me, to try kidney again, and I would probably still cry about it 😆. It looks less traumatic when he makes it at least.
Not kidneys but I remember dad cooking lambs brains ,poached in salt water for his breakfast it was sooo good I had to beg for just a little taste !
The sinew in the center is the Renal Pelvis where all the filtering tubules branch off of, lots of connective tissue.

Does he soak kidneys to remove the odor of urine when they're cooking and served. I've had them and the only thing missing was the deodorant cake at the bottom of the pan , other times they were fine but had been soaked with several water changes.
I wish I knew where to get some kidneys!

I honestly have never been in a butcher shop and saw kidneys for sale. Maybe our butchers are taking them all home. Are they a "butcher's cut"?
That "sinew" in the center are the renal calyces....where the urine collects. 🤣

Organ meats are extremely healthy. If the animal was healthy you have nothing to worry about.
If the animal is not healthy, you don't eat any of it, organ meat or any other part...

If your own liver is overly taxed, then eating organ meats is not advised. It may stimulate irritability, anger, and some unpleasantness
