I remember helping my Granny make these when I was a young girl. We would peel and cut the apples. She would spread a sheet over the top of the well house and we would lay the apples out in a single layer. At least once a day we would turn each piece. Once dried they were packaged and saved for later to make the pies or applejacks as we called them. I am so excited to have the recipe. I can't wait to make some. This recipe reminds me of our neighbor (Mrs. Carter) of many years ago who made some wonderful and absolutely delicious fried apple pies. She demonstrated her techniques to me (as I recall I was around 12 years old and I am over 60 now). Unfortunately, (being a pre-teen) I didn't truly appreciate what she was attempting to teach me [scratch pie crust,etc.] This neighbor was a GEM and a fantastic lady, as YOU are. I am making these pies using dried apples I dehydrated myself last Fall. I just got Pillsbury pie crust yesterday. I love the way you cut the dough. I normally cut out circles of dough and then roll the scraps. Your way is much more efficient. In addition I made apricot filling yesterday to use in a few pies. Thank you for the recipe.

My Grandmother used to make fried apple & peach fried pies using fruits from the trees she & my Grandfather grew. She made her own crust because she'd add a little baking powder to the recipe. Everyone in the family LOVED them
