The pinging jars at the end brought me right back to the kitchen this time of year when I was a kid. My mother preserved everything we didn't eat fresh from a big garden. I can still see the rows of green beans, red tomatoes and amber applesauce... lovely!
Never tried Curry. This sounds good. I just canned (first time ever) 25 pints of Chow Chow with my "end of garden" things. It is soooo good!!! Got the recipe from Whippoorwill Holler,Ms. Lori Brown. Used up my little green tomatoes,2 small cabbages, bell peppers, onions (really anything you have still hanging around)... yummy💕💕💕💕
My mama passed away without leaving her recipe for what she called “Green tomato ketchup”. It’s like relish & we put it on pinto beans. Chow chow sounds similar & delicious. I have lots of green tomatoes & peppers I need to use. Can you share your recipe, please? Thanks, from TN. 😊
OMG, I had 10 lbs of green tomatoes and made the curry. I gleaned 8 pints of curry and it's absolutely delicious, making this a staple going forward. Thank you for sharing,
Was it asafoetida? Asa-foe-tida. I use that in place of garlic. As I'm allergic to garlic. Some people don't like the taste of it. Fenugreek. Fen-u-greek. I have used it. It's different. But in the right dish it's good. I took off all my tomatoes a week or so ago. And I have them in various stages of ripening. Have been making batches of ketchup from all my remaining tomatoes as I get 25 pounds of ripe ones. As that is how many it takes to make a batch of ketchup. Got the recipe from Sarah at living traditions homestead. It's really good! Not like all the other ketchup recipes that taste like BBQ sauce. Have enough ripening tomatoes to do 2 more batches. Trying for about 80 pints. That should get us through a year of ketchup. Yes, we love ketchup on our homestead. Still have 5 tomato plants left in my greenhouse that are still doing really well. And will probably be good thru Nov. And my peppers and okra are still doing good in the greenhouse too.
We use alot of ketchup. My hubby and I like it on pretty much everything. 😍 a batch has made between 11 to 14 pints. And I have already made 4 batches as my tomatoes are ripening. Got about 47 pints so far.
Wow! I have never heard of anyone allergic to garlic!😳 that would suck! It's a natural antibiotic and I give a clove (to chew on) to our children and ourselves the first signs of sickness and it is gone within a day! It's are first go to and must have in our garden, we we never run out. Our health defense, I just couldn't imagine not having it! How did you get diagnosed or find out thats what you are allergic to,if you don't mind me asking?!
That looks and sounds amazing! Totally trying this with my green tomatoes that I have. I lost a few tomato plants in a storm and I didn't want to lose the tomatoes. Thanks for sharing!
You’ve done such a great job with your garden & preservation. Pat yourself on the back. You’re amazing & inspiring. You deserve a good rest after all the hard work. Thanks for all the awesome videos.
I'm so glad you tried it. I use the recipe from the 100 Dollars a Month blog. I love opening a jar and adding leftover chicken and a can of coconut milk. Your recipe looks great too!
I am STRESSED over all the green tomatoes I have left in my garden. Thank you so much for a solution. And I LOVE the way you ended the video with the popping of the canning lids.....what a sweet sound. You know it is as well. Love you guys.
You are my heroine because, like me, you make food your own just by rethinking a recipe or seasonings and giving it a try. I was always told that the only way to fail is “ not to try at all”. I have discovered some wonderful things to feed my family and friends by playing in my kitchen and keep on tasting until you like what you taste.
Fenugreek (Fen-you-greek) is one of my favourite herbs, it's so flavourful and gives that 'curry' taste to any dish. I've never grown it as it's so cheap to buy in the UK but I might try next year. I'd never think to curry green tomatoes but it sounds delicious. I'm about to pull all my remaining toms now the weather is turning so I'm going to have loads of green ones. I'm not a fan of green salsa etc (I don't actually like raw tomatoes, I know, it's weird, love them cooked) so this seems like a really good way to use them up and disguise the taste a bit. Shame to waste them!
I know this is an older video but I finally made this, canned it and on the self it has been for a few weeks. Well, I made this for dinner tonight with some cubed chicken. Rachel, thank you so very much. This was just fantastic and will be in my regular canning rotation.
I just came in from the garden bummed about all my green tomatoes that will NOT be getting vine ripened and the blight has set in too so this is inspirational! you knew we were needing this! thanks so much it's on the list now :)
I probably have abooouuut.... 30 lbs of green tomatoes, and I really don't want to have to deal with the fruit flies in the house anymore so...I am definitely doing this one! We love curry. Plus you had me sold with the words "water bath"!!! 😁 Thank you Rachel!
One of the best curry cookbooks out there is called 660 Curries (it's not actually that many curry recipes, it includes recipes for naan, breads and other things). I'm going to have to try this idea with green tomatoes! What a creative use for them!!
OOOOOOHHHH thanks for turning me onto this recipe Rachel!!!!! I wasn't sure what to make with all my green tomatoes ! Definitely wanted to try something different. Took your suggestions with making small batch before canning! It didn't even make it to left overs! Definitely be canning the rest thos weekend! Thanks michiganer!!! BLESSINGS to you and your family! Such beautiful raw content year around!! Super jelly of salmon harvest this year also!!!
My Grandmother (Mimi) used to slice green tomatoes, like for frying, & put them into a wide mouth jar. I don’t know the actual ‘recipe’ but I know she put vinegar & salt in there & I think that was all. She processed, as usual. We would open a jar, drain, rinse, Pat dry, bread & fry. If you didn’t know better, you would swear that they were fresh from the garden. I can’t eat tomatoes any more but I still have the memories. I miss my Mimi & tomatoes, too. Lol
That sounds fabulous & yes I do have some green tomatoes to pick tomorrow. Today is my Birthday (2nd Oct.) & having quite a few guests this afternoon for large barbeque afternoon- 70yrs Old Rachel I can't believe it but I still PARTY HARD. Cheers Denise- Australia
Got my eyes out to find a roaster like yours. My grandma had a nice one. Hopefully black Friday will have one. I'll wait till I find what I want to pay. Sometimes it takes a while, but patience always rewards me!! Lol. Thanks for all the great videos. I made the white clover jelly last night. I made the "tea" earlier. It's rather earthy tasting, different, but good. My grandma grew the beefsteak tomatoes, she really liked them and they would be huge. Best sandwiches!
Yum!! I make a curry sauce with butternut squash with coconut cream and so far has been something that we really love to eat! I might have to give this recipe a try! Surprised you didn't blend it into a sauce but of course that can always be done when you serve it.
I use to make a pie filling with half green tomatoes and half apples in between pie crust on a cookie sheet….so yummy and no one noticed it wasn’t all apples…brush the crust with milk then sprinkle cinnamon sugar over it then bake…
Thanks for mentioning using green tomatoes in baked goods. I have a green tomato spice cake recipe somewhere that’s really delicious. I had completely forgotten about it. I need to make sure to freeze a bag or two for baking some cake this winter.
Hi Rachel. The best recipe for green tomatoes. Thank you Rachel for sharing this awesome video. Girl, you are awesome and I hope Todd like it less chunky. I was wondering, why you did not make for your dinner some fried green tomatoes. That would have been awesome with ribs. God Bless you Rachel, Todd and all the animals. Take care. Maria. 🙏🙏🙏🙏🙏🙏👍👍👍👍👍👍❤️❤️❤️❤️❤️❤️❤️❤️🌹🌹🌹🌹🌹🌹🌹🌹🌹🌹🌹🌹😘😘😘😘😘😘😘😘
Thanks for sharing Rachel. I love curry! I think this is a fantastic way to preserve the green tomatoes of the season. I am wondering if a little more brown sugar would be good to offset the tang of the tomatoes? I would love to know how this turns out. I would probably add carrots and potatoes to the dish as is traditional in the curry I get from restaurants. Thanks again.
Hi, thank you so much for this recipe, but I was not able to find the links to the Indian spices that you had in the packets. It all opened up to other recipes so I’m not really sure what I’m looking for. Hopefully you could provide that information.❤
I missed this one. Had to come back and watch it since you cooked with in your January Pantry challenge. Looks delicious and I definitely will be trying this in a few months.
If you like Indian spices, look for lentil dal recipes. Lentils are crazy good for you, and served over rice provide a complete protein source for vegetarians. They come in bulk dry, and are very cheap. You can throw in all your different veggies, like you did for the garden pasta sauce.
Hi. Did you double stack the jars for water bathing? Is there enough room in the canner to have water over the top of the top row? I was wondering how to do that. I have the same canner. Thanks so much. I'm a big fan of that 1870's Homestead.
