      You should remove the buttermilk before dredging in flour, otherwise you end up with the chicken slipping out the batter/breading.

      I do the whole batch of chicken at once in my air fryer, the Ninja SP101UK Air Fryer-Mini Oven 10L 8-in-1 Flip Mini Oven. It's been great, can do 9 toast at once or a full Sunday lunch for 2, or just a large batch of roast spuds or chips, pies, etc.

      This was a good video however KFC are very big on copyrighting there name we had to change it to the generic name of SFC to avoid getting sued.

    Thanks for the various suggestions folks, i've updated the recipe with the idea about adding air holes to the baking parchment for better air flow, I think that's a great one that'll help get that hot hair moving and may reduce the cooking time - just make sure it's cooked through though! As always appreciate your tips!

      Get a silcone liner with holes to go on top of the rack. Super easy to keep clean and doesn't impede the air too much. It might be hard to get one that fits exactly, but you can always just trim it to size.

      Just spray some oil on the base. Then shake it around a couple of times. It wont stick. I use my air frier daily and have never had issues. Ive never put paper in it
      Also you could have reheated the chicken in the airfrier after to have it warm. Great way to reheat day old kfc and remove the extra grease. Just be sure to temperature check it. I do this all the time and it works fine.
      I use my airfrier daily and its great. Really good on falafel balls for wraps, great for lamb chops and fatty meats to drip out the excess and eat healthier.

      Don't use any paper liner and the air will circulate unrestricted.
      People generally use liners because they are too lazy to wash the pan every time.

    Im amazed by the pure coincidence that I just got some kfc for myself, but the even more amazing part is how good this airfryer chicken looks. It looks even better than what I got in my bucket rn XD

    im not sure if this works for an air fryer but a good tip for anyone breading chicken; to get those really nice flaky bits, press down on the flour covering your chicken really hard until it kind of cakes on there really nicely. this has without fail given me incredibly crispy flakes in a traditional deep fryer

      should use it more mate, its better than an oven, I mean, you got the space limitation but it does do what an oven can do in less time, I've cooked meringues in mine, cakes.. bread, as well as your standard frozen foods

    Use dried milk and egg mix and add it to the flour then just wet the chicken with water and cover the drumsticks twice. I can still remember the smell of the spice mix when making the flour up. It stays with you for the day.

      Hello, is this instead of buttermilk? Made some but used stuffing mix plus a few herbs but would like to try this one. Recently bought some KFC but it had a different taste to the original (very old person talking). Thank you

    I was a KFC Restaurant Manager a few years ago, I can tell you that buttermilk or eggs were never used. The chicken was dipped in water then into the flour mixture. The “secret” was the chicken deep fried in a pressure fryer… but, having said that, I can see why you need the buttermilk and eggs for air frying… I will be trying this recipe at the weekend. It just won’t be KFC… which can’t be a bad thing lol

      Not trying to be a balloon buster but what with power costs ingredients cost to cook 3 bits of chicken wouldn't be cheaper and less hassle ti just buy it from KFC?

    I've been making air fried chickhen for a while, definitely do use the spray oil to stop it drying out as much. I would also recommned cutting holes in the baking parchment to let the air circulate better (we use Dim Sum Paper with the little holes already in it). Doing big pieces of chicken like this is definitely doable but I prefer to take thighs and cut them up into strips/pieces, that way you don't have to cook it for as long and you get a nicer crisp without burning it. Definitely looked good for a first attempt though!

      Love that baking parchment tip! Yeah it's a good chance to experiment I guess, but it really did surprise me, this was just if it was gonna be any good, but fair play it was a good one!

    Looks amazing. Found a food hack I've been using and it works amazing, using the egg shell to remove egg shell that's in the eggs before whisking. Works sooooo well.

    Now it’s almost £30 for 14 piece bucket I might start making my own but I’ll use my fan oven so I can cook more at once. They’d be a riot at my house 30mins for 3 pieces 🤣🤣🤣

      Here's the original Kentucky Fried Chicken recipe:
      8 cups flour
      1 cup salt
      1/2 cup of MSG
      3 tbsp black pepper
      1 tbsp white pepper
      1 tbsp garlic powder
      3 tbsp oregano
      1 tbsp thyme
      1 tbsp paprika
      1 tbsp cayenne pepper
      1 1/2 tbsp cumin
      Mix well and store in a tight jar or sealed bag, the longer it is stored the better it is. Clean chicken, wash and dry. Dip chicken parts into beaten egg. Shake/mix in bag and deep fry @350-400F for 10 minutes, or until brown, use own discretion depending on the fryer. Use only oil. Enjoy! This recipe comes straight from the vault, there's more info on cooking times and chicken parts but you get the jest.

    A cheat for the Buttermilk is to add some Food Acid (Vinegar/Citrus Juice/Tartaric or Lactic) to Whole Milk which will curdle the Milk Fats similar to Butter Milk. I use a Decor Oil Bottle (2 actually) one with Olice Oil and one with Vegetable, for the various recipes I do. I cook mostly in Aluminium Trays (mostly 8 x 8s) to help contain the mess and reduce the clean up. Works well and still allows good airflow. I cook wholes Chickens in mine (8 & 10 litre/Quarts AFs). AFs are great for Roast, Pork, Pork Belly, Lamb Racks. I have hardly used the full ovens for years.

    I'm always amazed/surprised by British buttermilk, it looks just like a tub of sour cream (maybe they're the same thing???) Buttermilk here in the States is sold in jugs, just looks like slightly yellow-y milk.

      I thought he was marinating it in sour cream until he said it was buttermilk lol. I wonder how much, if any, difference the outcome will be using US buttermilk compared to UK buttermilk 🤔

      I don't think what we get in the UK as buttermilk is at all related to the process of butter making. I think it's milk with cultures added. Personally I just use plain yoghurt as it's cheaper and more widely available. It's still got the acidic nature and it sticks to the food.

    What is it with RUclipsrs and these air fryer liners ?
    Air fryers work by the air circulating around the food. Sticking liners in completely defeats that. So your basically just grilling it.

    I made this recipe last night. IT WAS GOOD! I had a dollar tree spice jar and i made an entire batch of the seasonings. This recipe is a keeper. The only thing I did different was lowered the time on the 2nd round of cooking.

    Good job. Having recently become a widower I bought an air fryer (neighbours advice) as learning how to make small meals is one of many things to relearn. I’ve seen a very similar technique on another RUclips video and tried it. It was amazing. I just used thighs. One comment I noticed on that particular video was that KFC’s secret ingredient was “ground bacon”. It wasn’t in the many ingredients. Maybe next time. Well done.

    I usually do 20 minutes and just check the internal temperature to be sure it’s cooked through. 28 minutes seems like a very long time.

      In my cheap one?! I've not seen that - I think the air fryer I have is quite limited as there isn't an extra shelf but that would speed it up!

    Don’t use parchment papier to allow the air to circulate better and there’s no need to turn the chicken over. If you want to prevent the dryness or have a more,deep fried taste add a table spoon of your favourite oil at the bottom of the sir fryer - it will circulate and coat as it fries

    one of my favourite things is roasting chicken in the air fryer, put a drop water in the bottom of the pan, cover the stand in foil with some holes pierced in it, place the chicken in there spray with a little oil (i prefer olive oil) sprinkle with salt then cook as needed, i use frozen chicken legs or thighs skin on. once cooked the skin is so beautifully crispy, next time i make it i can send you some pics

    You can't beat proper deep fried properly cooked KFC. When it's freshly fried and hasn't been sitting for ages. In an air fryer isn't really a proper substitute but it's still nice anyway.

      Ah man. I prefer chicken thighs since I started the channel, I just find them more, meaty!? Random one McDonald's once put chicken thigh meat in their nuggets with the breast in the UK and people complained about the slightly different colour, so they stopped. A man that is employed to watch chicken nuggets on a conveyor belt told me that lol

    Thanks for sharing, there's a trick: I soak them in lemon buttermilk overnight, just rubbing them with mayonnaise and added mixed spices. Such a hammer crust and tender, not dry meat is awesome. Well, the construction error with the hot air fryers is that the more content volume, the higher they go, but not in width. It doesn't fit a regular margarita pizza, you have to cut it into 4 pieces and put 2 pieces in with the top facing away.

    If you wanted to make it vegetarian for your daughter, you could use firm or extra firm tofu instead of the chicken. Skip the buttermilk marinade then follow the rest of the recipe as written (lower the cooking time a bit).

    Hi Barry. Could you try this in your convection or fan assisted oven? I've always been curious if it works the same as an air fryer.

      Bake on a wire rack for a solid 40 minutes at 180c or equivalent. Turning once. Check that it's cooked through internally by slicing the first piece of chicken (maybe pick the fattest one) or using a thermometer and making sure it's over 160c internal temp.

      An air fryer is "just" a small convection oven. The reason they work so well is the preheat time is minimal (and can usually be ignored) due to the small size. A big convection oven will also lose heat more so it uses much more energy and the ambient temperature is harder to keep up. One of the reasons why you usually reduce the temperature and cooking time when using a normal oven recipe in the air fryer because it heats quicker and circulates the air more efficiently (when not being blocked with parchment paper).

    One of my favorite things is just chicken thighs done in the air fryer with just very basic seasoning. The airfryer crisps up the skin really nicely while keeping the chicken really juicy

    Self-raising flour could be used instead of plain plus baking powder.
    Giving it a spray with cooking oil and baking in fan-forced oven exactly like in the air-fryer, does the trick as well.
    Using a full-sized oven means that you can cook all the pieces at once.

    You can get racks to put in the air fryer, so can get more in at once, having two layers. I've also got a rack with skewers, so you can do kebabs too.

    I was sceptical on air fryers. We had one years ago. Tried it once for some chips and it took nearly an hour to cook them. They have come a long way since then. Since we bought our air fryer, we rarely use our oven anymore. Except for things that wont fit in the air fryer (Baking cakes, scones, bread and stuff like that). We bought a double drawer air fryer because we liked the idea of being able to seperate things, which does mean less room for larger things, but we can still fit 4 drumsticks in one drawer, meaning we could fit 8 at a time. I also think things like sausages and chicken stay juicier, and it takes less time. Sausages take around 14 - 16 mins and the same for a decent drawer of frozen chips. Quick easy meals, saving time and money on energy bills.

    I usually cook it for around 25 minutes. Going ten, flip, and ten. Then remove and do the second batch. Then add the first batch back in and air fry for five more minutes. The chicken is cooked through (but make sure to temp with an instant thermometer) and not dried out. But the first batch gets warmed back up this way as well.
    But now I can do it in a single batch since I upgraded to an air fryer oven that has a larger capacity and more functions.

    I have a full-sized air fryer that holds a 9×13 inch pan. That's how I air fry chicken. I always spritz grapeseed oil on it from the start. It turns out perfect every time.

    I always give it a Spritz of oil when I put it in to cook. The second side normally doesn't cook as long as the first side. You kind of got to play around with it a little bit and find your sweet spot with the air fryer. I always leave my chicken in the oven on a low heat to keep it warm while I finish cooking the rest of it. Buy the time I'm done the house smells so good everybody is coming running before it's even done.

    I airfry a lot of chicken portions and think 28 minutes seems a bit long. I'd recommend getting a meat thermometer and checking it regularly. It should help prevent the 2nd side being a little overcooked compared to the first side.

    I've had my air fryer for 3 yrs. If I can't cook the food in the fryer I don't eat it. Our favorites are chicken, pork chops, burgers, rib eye steaks and especially salmon. The fish turns out unbelievably delicious. I can't remember the last time I used my oven. I think I made chips 5 times , very tasty but there is so much more to make. I'll make more chicken this weekend using your spice blend.

    I have 3 different types of air fryers. So my dilemma is which one do I use. I’m going to use my Ninja grill XL air fryer. And my power Xl fryer to compare. Good recipe. I like to spritz the floured chicken before air frying. Works great

    i learned how to make kfc chicken during lockdown then went on to start making it in air fryer. got same air fryer.. yes i spray it because always get some flour residue. you donr good 👌

    I use the same spices but use half flour half panko breadcrumbs. Also oven bake with butter in bottom of pan and turn half way. cooks in 40 mins.

      For less calories i use chicken fillets, plain flour first, then into whisked eggs, then into plain breadcrumbs which has all of his spices mixed in...then into air fryer for 180 for about 7-8 mins then turn for about the same time until golden..,

    My air fryer combo unit ALWAYS overcooks. I must watch the time on it. I'm thinking mine will take less time. Plus it holds a lot more product than yours. So I'm always guessing. And guessing with raw chicken scares me. But I'll give it a go anyway. Guess I'll have to use my eyes and nose too.

      If in doubt if it's chicken and it burns, i'd rather it be overcooked / charred. Cooking with chicken scares me a bit too I know what you mean! Yeah this is just a 4Litre air fryer.

    I have tried the method you use here. The only thing Barry I found is that the chicken detaches from the coating, I prefer the fried method wherein the coating sticks to the chicken.

    They look pretty damn good.
    Mind you an hour and a half to cook them all. It would be cheaper to cook them all in a conventional oven for around 40 mins or so. That's the only trouble with air fryers, they are great for one or two people, but for a family of 4 or more, the oven is cheaper. An air fryer is really a misnomer they are actually a convection oven with a big fan, lol

    Reminds me of Chef John's "oven-fried" chicken (basically the same thing, just in an oven), I tried it and found it to be just unpleasant, could have been the way I did it, but I found it was just dry and sandy-feeling with the dired out flour, so I just reverted to oil frying, cos it works for me, when I can be bothered to make fried chicken that is... :P

    Barry, save the little butter milk tubs, punch a couple holes in the bottom, and use them to start your green plants in for the garden. In fact if you save all your plastic tubs, you can use them for crafty storage bins, or potting starter plants. use them don't toss them. Of course if you reuse them as a food container in the fridge, be sure to put a label on top as to the contents. Mac * Cheese in a sour cream container makes for a disappointed dipper. LOL

    Air fryers are all different and you usually need to adjust the cooking times! After using it a few times you will get a better idea of how to adjust the times!

    Buying ingredients tomorrow, must try this. Im obsessed with my air fryer and some of that is just because its mostly hands free. Set it, forget it, shake it here and there, bung it back in. I can go off and cook something that needs my full attention. I must admit, we have had an EzyCook for over 30 years, very similar to air fryers but huge glass bowl. Not sure if only an Aussie invention, but its done us well all this time, same idea as the air fryer. Hot air, circulating around. Ezy cook is quite large though, good for families. My air fryer is the 2-drawer ninja which I love for quick 1 person meals.

      I have the PowerXL Air Fryer Pro and it's my favorite. Racks like a real oven, came with a rotisserie and more. Way better than the basket style air fryers. (easier to clean too)

    It looks like you might have to rotate the chicken more often than just halfway through the cooking time, possibly every 7 minutes so each side gets turned twice

    I would only dip in buttermilk and not marinate. When you marinate it it leaves a strong buttermilk taste behind.

    If you have like real fried chicken like cooked in shortening, cast iron skillet fried chicken. Cold the next day is the best way to have it You take it on a picnic with you or cold fried chicken is the best.

    You're missing celery salt & MSG. Both will accelerate the flavour. Also, use a 1-2 part plain flour/cornflour mix. Lastly, spray with sunflower oil and cook at 190 for the first 11 minutes, then 185 after flipped for probably 9-10 minutes. Over that is overkill

    i really want to try the vegetarian vertion but since i became vegetarian i have developed a sort of pepper allergy, not lethal just makes breathing sore and difficult and makes my throat burn and mouth blister if i have too much, i wonder how it would taste without the pepper?

    Looking at original flavor KFC the crust is not crunchy it's soft the extra crispy is the KFC that's crunchy so you truly have original KFC recipe there. Definitely gonna try the air fryer.🎅🚌👍

    The problem is the temp. Reduce it to 169-170 for 15 minutes turn it over and raise it to 180.

    Barry and my fellow viewers, I always marinate my chicken (or any other meat) and ALWAYS Salt and Pepper it so the flavor is driven into the meat, I would have probably added all the herbs and spices to the marinade as well. The last time I had KFC (in the 1990s) I found the breading tasty but the chicken a tasteless fiasco. if this is indeed the method they use I'm not surprised. Jim
