I’ve worked on McDonald’s and we cleaned the kitchen up every two hours or sometimes even more often. And every night we deep cleaned the whole thing. We cleaned the grills and everything from behind the grill. Everything is on wheels so when the night comes, we moved everything from their place and cleaned underneath. Seeing a restaurant as dirty as this makes me sick. You absolutely can keep a restaurant clean no matter how busy it is. There’s no excuse.

He's said he's had food poisoning over 3 times in his life. I had it once from eating Italian Salami, started throwing up an hour later, for 15 fucking hours straight until my guts ripped out of place. Was fucking hell! Easily could have died. I can't imagine what bad shellfish bacteria would do.

The touch and smell is actually quite important, it allows to know if you are in front of dirt/fat combined (so mostly need to get cleaned) or if there is fungus/bacteria developing (in which case it's a serious direct health hazard and need to be sanitized asap).

The cookie Gordon ate is a traditional Greek sweet we make for Christmass called κουραμπίες (kourampies). It is supposed to be loaded with powder sugar, just like the one presented to Gordon, you get a little messy when you eat it but its delicious.
In Germany we have Berliner (kind of doughnut without hole) that often have a lot of powdered sugar on top. But since they are quite large and also have a jam pocket inside I always make a big mess when eating them. (would never EVER eat them in public, haha) But they are delicious and definitely worth the mess. And I looked up the cookies you mentioned and they sound awesome. Will definitely try making them at some point!
People also usually inhale just before putting food in their mouth. That's a suicide move with something heavily coated in icing sugar, and you have to learn not to do it.

I really feel for Peter. This poor man has had a rough go and he's trying his best. It seems like his father made him go into a shell because he's afraid. I love that he gained confidence, and I hope for nothing but the best from him.
His mother isn’t supportive at all either when she’s a big part of the problem too. Keeps citing the health rating but nothing on the fact it smells like a sewer!
For those wondering , the restaurant closed around October 2007(same month the episode aired)and a new restaurant has opened up in its place.
I genuinely hope Peter is okay.

I saw an interview he had at one point regarding the end of the show, and he was going on about the turmoil he put his body through for all these places. Stomach ulcers and the like; definitely only so much one body can take.

Doug had no standards. He had a health hazard of a kitchen, relied on frozen food, had subpar control of his stock, had no team spirit and had no passion for making great food. What an embarrassment to all chefs.

Peter learned in childhood to avoid his confrontational parents and has avoided it ever since. I feel so bad for him. His mother blew me away but his dad was even worse, holy hell! I hope he found something he likes to do and is living a better life.
The cookie Gordon ate is a traditional Greek sweet we make for Christmass called κουραμπίες (kourampies). It is supposed to be loaded with powder sugar, just like the one presented to Gordon, you get a little messy when you eat it but its delicious.
I don’t know but it actually looked good.
In Germany we have Berliner (kind of doughnut without hole) that often have a lot of powdered sugar on top. But since they are quite large and also have a jam pocket inside I always make a big mess when eating them. (would never EVER eat them in public, haha)
But they are delicious and definitely worth the mess.
And I looked up the cookies you mentioned and they sound awesome. Will definitely try making them at some point!

It's called editing. He may have said that about being fired by the owner and they just inserted it there. The audio editing in this show is terrible, they fabricate entire sentences with chops you can hear it all over the place.
