      Exactly. Perfection is neither expected or achieved. Well, other than the mostly pesky bacon, which goes from 'not quite' to 'grrrnt' in 49.5 nanoseconds! If ya make it ya eat it > Luckily everything else was in fact done perfectly!

    Hey Sam! You ask for suggestions on what to make next. Here's one. When I was on active duty years ago, I was stationed near St Louis, MO. This is where I learned about Toasted Ravioli. It was on the menu in restaurants as an appetizer and you could even get them in the frozen food section of grocery stores. They were always meat based and served with a marinara sauce. I think that would be a great munchy/ appetizer video and you could also put your spin on it and mix it up a bit with different versions.

      Garlic Brothers in CA used to make a deep fried ravioli that was breaded and spaghetti sauce for dipping. Was a fantastic appetizer!

    I grill exclusively over charcoal, and I always use cedar planks for salmon. Best salmon I've ever had.

    Remember everyone. A smoker means there’s smoke inside the grill. You can smoke on almost anything. You don’t need a thousand dollar traeger. Weber kettle can smoke like a beast. You just lose the convenience of auto temp control. Imo it’s even better because of charcoal and wood flavor combining 👌 this channel is awesome.

      I do some fantastic smoking with nothing but the lid from a Weber.. paired with a nice hole in the ground and wood from the- erm- woods

    I smoked ribs on my flat top. I put wet wood chips in a foil dish on the flat top and the ribs on a rack next to the wood chips. However, I think this is a much better method!

    The cedar plank salmon you did few years ago is still one of the favorite recipes of my family, and all the friends I cooked it on several occasions. No better recipe around. The mix of cedar, mayonnaise, sugar and Sriracha is just next level. thanks Sam, you’re a hero

    Sam, I have used this method many times, but soaked the planks in an apple cider or juice and bourbon. Always had great success with it.

    Sam, your cooking with love is so inspirational and the video footage is superb. I have a boyhood memory of my nanny (Grandmother) cooking southern fried hoecakes and fish cakes. The hoecakes were a really dense bread with cracklings in it, fried in an iron skillet. The bread was about an inch thick, denser than biscuits and was flour based, not cornmeal. Salmon was to expensive so she used canned mackerel. Thanks for all your recipes and I'm definitely going to be using some cedar planks on the griddle soon.

    Suggesting an awesome pizza that came from a bar & grill that I would go to after work, that unfortunately closed earlier this year and was replaced with an "Italian Steakhouse."
    It was called a Sweet Caroline, after the song. It had a Memphis sweet red BBQ marinara sauce, smoked chopped pork, smoked gouda cheese, and green onion.

    Max - would you consider making some dishes that are good for dropping off for a family with a new baby? Too many casseroles and not enough variety.
    Objective: including vegetable, protein, carb options in same dish that is easy to make and ideally can appeal to a whole family. Maybe a green bean, potato, and chicken in a pan? Any great takes on how you’d do that?

      I would think sheet pan dinners would be ideal for this. Protein like chicken or pork then add some veggies. Easy and not much to clean up. Deliver on the pan.

      As well with my Blackstone instructions, they say OK to cook (hood, not cover ) with it down, but no more than 10 minutes..

    I moved to the PNW about 6 yrs ago and had never heard of cedar plank salmon before until then. Told my friends from TX and NY and they didn't believe it made a difference or would even work lol. UNTIL they tried it.

    I really enjoyed the episode. Seeing the grilled salmon, made me think of a salmon dish my husband used to make. Joe died in April and I really miss his cooking. I have no idea what the ingredients are. The salmon was marinated in an Orange poppy seed marinate. I do not know what else is it. He then would make a chili mayonnaise sauce. If you could come up with something I would appreciate it. He did use cedar planks on the grill

    All redwoods are toxic. Yes cedar is redwood. I would like to do this with fruit tree woods and even hickory. Nice idea with safe wood.

      I no expert, but I don’t think Weber would be selling something that was toxic and I know that Cedar has been used for cooking salmon for just about forever! But I could be completely wrong about that and according to California proposition 65, just about everything is toxic.

    Make sure to purchase cedar planks made in USA or Canada. You don’t want the chemicals used in cheap planks from other countries like. Could be hazardous to your health.

    Ok I got one for you!
    Remake of "Tater Tot Hot Dish" or "Hamburger Hot Dish" or "Teenagers Delight" depending on where you make it.
    350 Degree oven
    Cooked Ground Beef
    Tater Tots
    Cream of "something" soup. Onion, Mushroom, Celery, it all works.
    Top with Cheese of your choosing, we like shredded cheddar. Bake for 10 more minutes to melt it. Add Fried Onions on top bake 5-10 more minutes (broiler helps here briefly)
    The effect is a Cheeseburger in a Casserole with French Fries and Onion Rings. It's absolutely delicious. Wife and I have added corn, because it works. But please play with it!

    Would you guys get a whole pig or a whole lamb and cook it slowly on a spit. Stuff it, baste it, beverages etc we'd watch for hours!! The meat could then be given to a local food kitchen or homeless shelter etc. I know it may sound boring but if the Sons of Sam were there as well... sounds like a hell of an afternoon to me!
