Long Pepper is a specialty pepper variety sold as long spikes covered with tiny peppercorns. It has an incense-like aroma that is sweeter than black pepper, but its flavor is actually hotter, with a slight sweetness.
Though it's an obscure spice in Europe and the U.S now, long ago it was the dominant pepper in Europe. The Ancient Greeks and Romans actually considered it superior to black pepper.
You can grind it and then use it similarly to black pepper or infuse it into dishes whole, before discarding as you would a bay leaf. It can also be added to brines, marinades and pickling solutions.
