It’s brilliant cut into florets, tossed in some oil with salt and pepper and roasted. The colour really adds to the flavour…
Britain has Cauliflower cheese, never broccoli cheese, & it is a firm favourite over here.

This looks so delicious--and I love the easy directions for the bechamel sauce. I've always been a bit hesitant on making it but you make it look so easy. Cauliflower is on sale this week at a ridiculously low price, so this recipe is on my "to do" list. THANK you.
Any italian deli sells ready made Beschemel - as does Lidl; but only during their Italian week, so I stock up.
@@Carmen-fr4dw This looked very easy to do, though. I can only dream of going to a Lidl where I live--and I do have a bag from them that I got when I visited Germany one time!

I sprinkle seasoned bread crumbs, parmesan cheese, fresh ground black pepper and a dab of butter on steamed cauliflower and it's delicious. I even got my sons to eat it that way when they were young.
Add a layer of sliced tomatoes before the breadcrumbs to add more nutritional value.
I like Béchamel but I prefer to use corn flour/ maïzena, starting cooking out of the hob with maïzena always

It's called cauliflower cheese, an English classic. you can leave out the cheese as I do. Also can use broccoli if you like. Very common on English school menus. Served on its own or with meat etc, as a veggy, but mustard is added instead of garlic.
I would have put the leaves in the boiling water, save the water for tomato juice.
Looks good, going to try it, in some ways it reminds me of the keto-"mac" & cheese I useed to make - of course with various substitutions, but close.

Yes, you can use frozen cauliflower here, as long as it´s uncooked, cook it in the same way :) much love

Very good recipe! I have been doing something similar, however I never eat bechamel as it’s not good for body (flour mix):) so I make a mix of sour cream, feta cheese (possible any grated fermented cheese), garlic and one egg for consistency. This mix I pour over cauliflower before placing it into the oven..

I would also add some nutmeg in the sauce, and caldo vegetal.
Nice recipe, which I can recommend! I have been making gratinated cauliflower for many years. My preparation is slightly different in small details. I steam the vegetables. This is gentler and preserves the vitamins better. For my bechamel I do not take onions and garlic. I use butter and stir in the flour. For seasoning I use nutmeg and a pinch of vegetable broth granules, as well as white pepper. Finally, I add grated Pecorino or Parmesan to the Bechamel. If you like - try this version next time.

Being born & raised in Britain, I, off course, often make the traditional 'cauliflower cheese', in which the cauliflower is not pre-boiled, but placed in a grating dish & the cheese sauce poured over. I cheat, using the Italian 'Chef' beschamel or, because the taste of the cheese masks it, Lidl's Italian beschamel, which has less flavour. The whole thing is baked in a slower oven for about 4 minutes & that way none of the vitamin c is lost from the cauli. It also gives me more time on my allotment growing & watering my own cauliflowers.
I’d suggest you only need to add enough water in the pan to just cover the cauliflower. Not only does it save on the energy needed to boil the excess water, but you lose more flavour/nutrients.
Needs cheese in the sauce
I'd use a Mornay sauce...
