CHOCOLATE ORANGE POT
40g Traditional Oats
1 TBSP Chocolate Powder
1 TSP Orange Essence
100ml Plant Milk
100ml; Water
1 Satsuma
METHOD
Mix the oats, chocolate powder, orange essence and liquids together.
Cover and keep in the fridge overnight.
Top with satsuma/orange segments in the morning - enjoy!
SQUASH AND WILD RICE BAKE
1 medium Butternut Squash
125g Wild Rice
1 TSP dry Sage
2 Medium Leeks
1 red Onion
6 Spring Onions
1 Slice of bread (toasted)
2 TBSP Nutritional Yeast
METHOD
Wash the squash, pierce several times, place on a baking sheet and bake in the oven at 200/400F until cooked through, about 40 minutes.
Cook the rice as per instructions, drain but keep the water.
Finely chop leeks, onions and add to a large pan. Add Sage, salt and pepper. Water sauté for about 15 minutes.
Make some breadcrumbs by adding the toast and nutritional yeast to a blender, and quickly pulse blend.
Remove the squash from oven, chop into bite sized pieces.
To the leeks and onions, add the drained rice, squash and 1/2 of the breadcrumbs. Add 5 TBSPs of the reserved rice water. Mix. Sprinkle the remaining breadcrumbs on top.
Back into the oven for 10 minutes. Serve with a salad or steam veggies.

I love overnight oats too, at the moment my favourite is carrot cake, grated carrot, sultanas, flaxseed, cinnamon, vanilla extract and oat milk, soo good 😋.

I love your book. Made carrot oat porridge which was great. So many breakfasts to make also. Last night I made your Ultimate Chilli as I had a bust day today. We have just eaten it with wholegrain rice made in my Instantpot. Great. 2 portions in fridge and 2 in freezer. Definitely be a favourite. We are on a self catering holiday in Lytham St Anne's soon so this will be on my menu! Thank you. Book so helpful and easy to read!!!

The breakfast looks great, I've always enjoyed the chocolate and orange flavour combo. I enjoyed jaffas as a kid.

Chocolate and orange is one of my favorite combinations! Thanks for the tip to bake the squash whole. Slicing raw squash and scooping out the seeds before cooking has always been super difficult. I hope everything goes well with your family and glad that you are still posting even during difficult times. Been going through some sad news in my family as well. This has been a welcome distraction!
