    Making maple syrup for the first time turned out to be my favorite project for the entire winter. It was so peaceful. Time in nature. Time by the fire. And the final product is so delicious. I wasn't sure if I was going to have enough time to start tapping trees this year, but figured might as well just start small now and learn as much as I can from my first season. I'm so glad I went for it, because now I know this is going to be a family tradition for years to come.
    I know some people who are making syrup on a larger scale and run hoses through the whole forest, but there is something so magical about just putting up the metal buckets, collecting the maple water each day, and then boiling it all down on a big open fire. I'm excited to design our sugar shack, so we can enjoy homemade maple syrup all year long. And we're definitely going to be drinking maple water next season!!

    As someone who lives in a tiny house with my little family I was thinking the whole time THERE IS NO WAY THIS IS ACTUALLY A SURPRISE! But seeing Dana's face it's so clear that you ACTUALLY pulled that off, what an amazing treat! Go papabear go!

    There is a chapter in the book 'Braiding Sweetgrass' that talks about the indigenous people of your region leaving maple sap in troughs to freeze overnight, the water separates off the sugars with each freeze, therefore saving firewood. Worth a try maybe? You have a beautiful life and property ❤

    This was really lovely to see your love for maple syrup! Maple Syrup is a really important Indigenous knowledge and Traditional Ecological Knowledge (TEK). European settlers who first arrived to Turtle Island survived a winter and environment they were not used to because the Kanien'kehá:ka (Mohawk) shared maple syrup and sugar cultivation with them. It is so important to honour where this knowledge comes from, and that settler being on the land is intrinsically tied to Indigenous Ways of Knowing and relationality. They shared knowledge so that we (settlers) were able to survive and thrive. Leanne Betasamosake Simpson, a Michi Saagiig Nishnaabeg scholar, artist, writer, and activist writes beautifully about an origin of maple syrup in her book As We Have Always Done. I highly recommend it!
    It is also really important to share Indigenous relationships with the land and their knowledges because maple syrup has been understood as a "Canadian" (i.e., settler) product, and Indigenous maple syrup makers were shamed for their sugar shacks. Hopefully, in the future you can bring some of these voices and perspectives into your maple syrup journey. I'm looking forward to it. Max and Dana looked so happy!

    We boiled sap over a campfire for the first time this year. I read to keep only 3-4 inches in the pot and keep it boiling, adding as it boils down. This worked great for us. We finished it inside. It was a magical time and the smokey finish to the syrup is so good!

    Hi, if you make some lime mortar and bond the stones of your fire pit you could incorporate the angle iron closer to the fire and also shelter the bottom of your pot from the wind.

    Wouldn't putting a lid on the pot be a good idea? I mean, just to get it to boiling point. Then remove it so it can evaporate. Love you're making this for Dana!

    We do this with pommegranats in september to create a think and healthy molasse which has all kinds of health benefits. İt is called 'nar ekşisi'.

    The first year I did maple syrup I did the same as you in the house and my whole kitchen my walls my windows were covered in sticky sap from the steam that comes off so I'm hoping that your wall tent is okay. You're right it is very beautiful experience sitting out by the fire and smelling those Aromas your syrup is done when all the water has boiled off and you've reached approximately 218 degrees. You'll know that by when it starts to get rolling boil and it looks thicker and it starts to rise up to the top of your pot and you turn it off right at that moment and take it off and you know it's done and thick and beautiful and will store well.

    Next time lid the pots until they come to a boil then remove the lids. They will come to a boil quicker since they wont be losing heat. Love that you are making your own syrup!❤

    I grew up in Ontario and I'm ashamed to say I never knew maple syrup wasn't brown straight out of the tree! This was one of my favourite videos because I get to see Lou do something that really excites him, and with Dana finding her passion in Meditation, I feel so blessed to be a witness of them reaching such fulfillment, and to see them so happy

    Use a lit on it until it boil. And I do agree with the person under to do something that it can get closer down to the fire. Astonishing very very nice done ❤

    A little trick to make it easier to clean fire soot off pots is to rub them with dish soap on the outside before putting it on the fire.

    I loved to visit the local Sugar Shakes each spring. I think maybe in your future you could build a sugar syrup structure that will help with maintaining heat without heat loss. Also a lid may help. And a large candy thermometer can help too with reading temps to see where you are in the process.

    Great video! I saw few years ago a family making Maple syrup and they had big but rather shallow pans on a huge fire stove they had outside. They processed around 50 gallons of sap. Just research and maybe you can even build your own set up/stove.

    Great video! Don’t know if it’s been mentioned, but maybe keep the lid in the pot until it boils. It’ll boil faster that way.

    I use flat food server warmer trays with a lot of surface on the fire outside to boil my sap down. The trays are sunk below the level of the cinder blocks to keep the heat right around the pans. gonna try propane outside ( 0r in a sugar shack) next year. It does look a bit thin, tho it will thicken up a bit. The ratio is AT LEAST 40:1-it all depends on the type of maple you tap, how wet it was last year and thru the winter. That said if its a bit thin but is going to be eaten up quickly-who cares? The only time I worry about it is if I'm going to can the syrup for later use.

    You need to get you a hydrometer then you will know when the sugar conten is right to stop boilling it. Your looks a little dark.
