It's a tradition in Turkey, Iran and most of the Middle East and people there would not pay for a kebab made with meat grinder, especially Adana kebab etc.. These large kebab knives are "cutting" the meat into small enough pieces and not smashing it. I agree it's not always feasible and not everyone has / should buy such a knife. I'm just using the authentic methods used for centuries in my home country and neighboring regions. It would be much easier though using a meat grinder, trust me it's been tried before.

You can’t get a meat grinder in 2022?
You can make this with a meat grinder but for kebabs you can't get the same texture and the taste.
