    Honestly, I'm just amazed at the quality of your content, I've been following for a while, but I can't stress enough how impressive it is that you keep producing content at such a high level even though this isn't your main gig (yet). I have so many questions, how do you manage this / your day job? How did it start (have you been passionate about food/film long before you started producing content about it?), Do you normally enjoy dining alone vs. with a group (if so, why) or is it something you prioritize for the content itself? What are some dreams you have for the channel? (content, restaurants/countries you can't yet afford but dream of experiencing) - maybe a Q&A is in order? -- again, incredible content, keep doing what you're doing, just happy to tag along

    You know I was waiting for this one! I've mentioned before, The Modern is one of my favorite restaurants in Manhattan! I've done the dining room a few times, the bar room more times than I can remember, and the kitchen table only once (but, an experience worth saving up a little cash for)! This is super playful and fun, and while I agree about bone-in, I think this suits the atmosphere perfectly. Thank you for putting yourself through the rigors of fine dining on all our behalves!

    I like that the restaurant has added a playful element to their menu with that eye catching fried chicken “bucket”. Also surprising was the complimentary Fougasse bread. This bread is a rarity in most restaurants. Not sure why? Goes to show that the kitchen is willing to go far above and beyond the norm. A delightful experience enjoyed by us viewers. Good work, James.

      You give France too many credits, ‘fougasse or Socca a specialty of Provence -Alpes Maritimes (/Nice, Menton, Cannes etc..) were actually introduced to Italy (which then were introduced to France) by the Arabs. They brought us the whole concept of making Focaccia and Pizza, not to mention pasta and sorbet. Shocking, right? Read Luca Gavoni: Mangiamo Arabo Senza Saperlo ( we eat Arabic without knowing it) . The French are very good at copying world’s prime dishes, flavors and ideas and they claim it as their own.

    Chicken is such an underappreciated food. I would love to see our dining culture do more with them from the supply side, so much of our chicken is from the generic battery farms but there's a lot of variation possible with more artisanally raised chicken. Capons (special castrated roosters,) you almost never hear of restaurants doing anything with capons but I understand the flavor is no comparison to the generic months-old fryers we see most often. There is just a world of possibility on the gourmet supply side, that is really not being exploited.

    James if you love fried chicken I recommend you try Korean fried chicken. Korea has more fried chicken shops per capita than the U.S. They have mastered fried chicken - crunchy, yet not greasy. I have heard great things about Cote (also Korean). I suspect they would make good fried chicken, but it is not their specialty.

      That's a hard to say. This was very good, but it's a bit different than the typical fried chicken. I like Charles Pan-Fried Chicken a lot and Pecking House is very good. I still haven't been to COQODAQ yet, but it's probably worth trying.

    May be a dumb question but...does the 2 stars apply to both parts of restaurant?

    • @Jamesnu
      @Jamesnu  7 месяцев назад

      The Michelin Guide does mention both parts of the restaurant in the same entry, but I'm sure the restaurant earned their stars from the fancier dining room section.

    Honestly that white choclate lid with bananas on it more looked like something you get at a rundown amusement park, and it looked kind of cheap to fill up the bucket with so much fries to, make a smaller bucket with just chicken and then fries on the side instead.
