@@bustedknucklediy9267 Wittner Fine Tune pegs would work OK & they make a stringing crank for them so that when you change the strings all you need to do is turn the handle.
Sometimes I do yes, but I find more often with these old trade fiddles that Just cleaning up the rough gouge marks and redoing the bass bar if it's carved in is sufficient to make them a very playable instrument.

I think Geared Tuners might help enhance tuning stability.
I have done that in the past , and I love them! But I don't really mind fitting new ebony either.

Do you regraduate these violins? After that process is done they usually play great.
