I can tell you that fall off the bone wins in BBQ comps in Texas .....dont believe all the stuff on the internet ....the judges in Texas are not certified, just folks like you and me, they can only use a plastic knife and fork to judge.They cant use their hands, and can only enter the box once. If they have a hard time getting a bite with plastic utensils ....you will get dinged! Over is always better!! i over cook them every time and do well in Texas IBCA competitions.

Thanks Justin, Another great video! I currently use the Yoder YS640 but I’ve been itching to get an offset smoker and don’t know which one to go with. Love the Lone Star grill that you have and I’m guessing, by your comments, that this might be a great choice.
Thomas Farr It’s one of the best made and on top of that it’s one of the better values in it’s class. You can find, “cheaper “offsets, don’t get me wrong, but once you stand side-by-side next to both of them, you see where they cut the corners that Lone Star Grillz just doesn’t do. I can’t recommend it enough.

I was heading to BBWC in Memphis before it was postponed, It was a present from my wife and I’m totally bummed about not going now. Just ordered a 24x40 offset from Lonestar along with the fire management basket. Was wondering what the best size wood split would be for the basket? My thanks.
Looks like you have the 1/2" fire grate (w/lifetime warranty). If/when the expanded metal wears out, would you actually replace it or just use the fire grate as the bottom of the basket?
Great question. I haven't had time to really think through that so I don't have an answer. I'm really happy with how it works now though so I'd probably replace it. Helps for moving things around
I have literally never used an offset. Don’t really have the space for one. Don’t really need one. But darn it if you aren’t making me want one! One(ish) question, why is there another vertical box on top of your firebox? Doesn’t just having one give you the option to direct grill ?

I’ve been watching you’re a RUclips channel for a while now. I have a question about a Komodo Joe big Joe versus a an offset smoker. Which gives you the best bang for the buck. Also which gives you the most versatility on different cooks. I’m trying to decide which one to invest in. Your insight would help me very greatly.
Hey Justin! That \m/ designed basket is long overdo for long low n slow cooks on the LSG. Always thought their firebox was way too Big for an efficient burn, as You demonstrated with trying to keep a hot coal base together. But on the other hand, it's larger design is Great for the option of it's direct grilling and searing. I'll tell You that with my \m/ "Clean Burn" basket,... Fire Management is made almost Too Easy! 🔥 So to Your question..........Do I Need It? No........I Already Have One! 🔥👍 \m/

Love your videos man, been watching for quite a while. Been doing some recording myself, struggling with the audio. What do you suggest using to capture audio when recording with an iPhone that won’t break the bank? I know you mention a few things you use above, but those are a little out of my range. Lol
Hound Hogs BBQ The best thing you can do is get your mouth closer to the mic. That’s the reason why I wore that microphone on my shirt. A $3000 microphone from 5 feet away can’t compare to a cheap mic from 12 inches away. You would not believe how much noise those workers were making even while I was shooting. I could barely concentrate but you guys can still hear me. The cheapest solution is when you’re filming your pit make sure your mouth is close to your phone. That will help a lot. It’s surprising actually.
Hi Justin, with the fire management system, do you still find the need to preheat splits or does the concentration of the coal bed make it unnecessary?
Thinking of getting a Weber Summit. What size Slow n Sear should I get? Seems like they only make them for 22" grills or the XL for 26" grilles but as you know, the Weber Summit is a 24" grill.
Do you feel like the basket makes the pit more efficient, and you're using less wood than without it? I'd think maybe so if it keeps the coal bed nice and contained.
I can tell you from my experience (with a 24 hour beef shoulder cook) the basket concentrated the coals, instead of them just randomly falling about and through the grate. I wasn't having to add splits as often.
I think so but I recently switched wood piles and have only used the basket since. I'll get back to you. But yes, I think so. However, I'd have it just for how it much easier it makes the process. Just add logs. It's great.
Fellow NTBA member, can you do a video on advanced WSM fire management? Beyond minion, but how to get clean smoke on the first half of the cook? WSM seems to smolder coals by design.
@@BabyBackManiac 22", using briquettes. Have used KBB, RO, Weber. I haven't tried lump in the WSM because I feel like I would have to choke down the bottom vents even more to keep temps with lump. Open to suggestions.
@@BabyBackManiac just did a side by side comparison of RO vs Weber briquettes. RO ridge I think was my issue. Produces a lot of dirty smoke compared to the Weber briquettes. Want to try B&B briquettes next.

great video!! love the fire basket. I can tell you that fall off the bone wins in BBQ comps in Texas .....dont believe all the stuff on the internet ....the judges in Texas are not certified, just folks like you and me, they can only use a plastic knife and fork to judge.They cant use their hands, and can only enter the box once. If they have a hard time getting a bite with plastic utensils ....you will get dinged! Over is always better!! i over cook them every time and do well in Texas IBCA competitions.

Thanks Justin, Another great video! I currently use the Yoder YS640 but I’ve been itching to get an offset smoker and don’t know which one to go with. Love the Lone Star grill that you have and I’m guessing, by your comments, that this might be a great choice.
Thomas Farr It’s one of the best made and on top of that it’s one of the better values in it’s class. You can find, “cheaper “offsets, don’t get me wrong, but once you stand side-by-side next to both of them, you see where they cut the corners that Lone Star Grillz just doesn’t do. I can’t recommend it enough.
Thomas Farr However, I would warn you that an offset is a big jump from a pellet Grill. They are a lot of work. It’s fun though

I’m looking forward to the learning curve with the offset and always appreciate it when I can learn from people like yourself and others who have a lot of knowledge to share. I was heading to BBWC in Memphis before it was postponed, It was a present from my wife and I’m totally bummed about not going now. I was hoping to see a lot of offset smokers in action and see the quality of the build. The Lone Star has been at the top of my list and I’m really leaning that way after your video. Just ordered a 24x40 offset from Lonestar along with the fire management basket. Was wondering what the best size wood split would be for the basket? My thanks.
Looks like you have the 1/2" fire grate (w/lifetime warranty). If/when the expanded metal wears out, would you actually replace it or just use the fire grate as the bottom of the basket?
Great question. I haven't had time to really think through that so I don't have an answer. I'm really happy with how it works now though so I'd probably replace it. Helps for moving things around
Probably will never become and issue but yes just leave the v shape device in the there and let the wood and coals sit on the 1/2” grate.
I have literally never used an offset. Don’t really have the space for one. Don’t really need one. But darn it if you aren’t making me want one! One(ish) question, why is there another vertical box on top of your firebox? Doesn’t just having one give you the option to direct grill ?

I’ve been watching you’re a RUclips channel for a while now. I have a question about a Komodo Joe big Joe versus a an offset smoker. Which gives you the best bang for the buck. Also which gives you the most versatility on different cooks. I’m trying to decide which one to invest in. Your insight would help me very greatly.
Hey Justin! That \m/ designed basket is long overdo for long low n slow cooks on the LSG. Always thought their firebox was way too Big for an
efficient burn, as You demonstrated with trying to keep a hot coal base together. But on the other hand, it's larger design is Great for the option of it's direct grilling and searing.
I'll tell You that with my \m/ "Clean Burn" basket,... Fire Management is made almost Too Easy! 🔥
So to Your question..........Do I Need It? No........I Already Have One! 🔥👍 \m/

Looks like you are in the DFW area, where do you source your ribs? I have never found racks as even as the ones you have shared over the years..
Love your videos man, been watching for quite a while. Been doing some recording myself, struggling with the audio. What do you suggest using to capture audio when recording with an iPhone that won’t break the bank? I know you mention a few things you use above, but those are a little out of my range. Lol
Hound Hogs BBQ The best thing you can do is get your mouth closer to the mic. That’s the reason why I wore that microphone on my shirt. A $3000 microphone from 5 feet away can’t compare to a cheap mic from 12 inches away. You would not believe how much noise those workers were making even while I was shooting. I could barely concentrate but you guys can still hear me.
The cheapest solution is when you’re filming your pit make sure your mouth is close to your phone. That will help a lot. It’s surprising actually.

Hi Justin, with the fire management system, do you still find the need to preheat splits or does the concentration of the coal bed make it unnecessary?
I never did with this Cook. But the answer is pretty much depends on how green your wood is. If it’s well seasoned you won’t need to. Case in point.
with a wire grate over the top, that fire basket would make a great grill for camp fire cooking.
Do you still need to put it somewhere safe though. Since it’s open on the bottom

Just recently purchased a large 6ft reverse flow smoker. Would I benefit using this or a square basket?
Thinking of getting a Weber Summit. What size Slow n Sear should I get? Seems like they only make them for 22" grills or the XL for 26" grilles but as you know, the Weber Summit is a 24" grill.
Do you feel like the basket makes the pit more efficient, and you're using less wood than without it? I'd think maybe so if it keeps the coal bed nice and contained.
I can tell you from my experience (with a 24 hour beef shoulder cook) the basket concentrated the coals, instead of them just randomly falling about and through the grate. I wasn't having to add splits as often.
I think so but I recently switched wood piles and have only used the basket since. I'll get back to you. But yes, I think so. However, I'd have it just for how it much easier it makes the process. Just add logs. It's great.
Fellow NTBA member, can you do a video on advanced WSM fire management? Beyond minion, but how to get clean smoke on the first half of the cook? WSM seems to smolder coals by design.
which size do you have? and what kind of fuel are you using?
@@BabyBackManiac 22", using briquettes. Have used KBB, RO, Weber. I haven't tried lump in the WSM because I feel like I would have to choke down the bottom vents even more to keep temps with lump. Open to suggestions.
@@BabyBackManiac just did a side by side comparison of RO vs Weber briquettes. RO ridge I think was my issue. Produces a lot of dirty smoke compared to the Weber briquettes. Want to try B&B briquettes next.
