John C Cargill Precisely! You mess with it every season Hahaha. But they’re not bad or unreliable at all. It’s a lot easier to troubleshoot carburetor problems than it is fuel injection problems and both are just as bad when they fail.
I gotta say I spent 8 hours rebuilding the original holley carb on a 1987 F350 7.5L last weekend. was very frustrating. Used the wrong gasket, set the high idle cam under the choke arm, bowl fill needle was stuck due to dryness (Learned to pre lube with fuel). Was my first time ever touching a holley, but now that it's done and working I feel like I could do anything. Really the best way to learn about carburetors is to rebuild one and make it work. And I always say you can usually make a carburetor run very shitty (if you have fuel and spark) to get you home. But if your computer chip fries your stuck. ON THE OTHER HAND, we have multiple fuel injected 5.4L F250s that have had nothing done to the engine besides spark plugs and oil in 200k miles...
I had a 68 Firebird that I had to replace the motor in, and when I did it, I went the same direction with simplifying things. I kept a carb (holley 4bbl) but put a full MSD ignition in and did the same swap to an aluminum intake. It is really amazing just how heavy those iron intakes are - and all that weight is up high...
Spring hose clamps are the BEST if you have to use them. No leaking ever, no adjustments needed ever... the only issue CAN BE a tight fit, but that makes any bolt nut or clamp annoying. My favorite part is that as the hose dries and gets squished over time it keeps an even pressure on it and keeps it from leaking. Also they're quick to take off if there's enough room for pliers or the tools they make to specially remove them.
You could use a early mustang tank where the spare tire goes. CJ Pony parts 19 gallon. Yes, the original valve covers were gold and the Block and heads were Black
I have a 73' with a 360 V8 FE. It runs flawlessly BUT it is prone to oil leaks at the seams and for the reasons you are encountering I have not as of yet changed the intake manifold or carb.

Suggest you consider replacing the engine oil seals, do transmission service and look at the seals and replace the filter, and reconsider replacing or fixing the other gas tank. Having that old antifreeze sit in the radiator for a long time probably has impacted the radiator condition. Also consider looking at the condition of the timing chain. Best wishes. I think you do good work.
On the transmission, in another video they mentioned they were going to do a full rebuild of it. But I agree on all of it. I bought a 2003 vehicle that had low miles a couple years back and the amount of stuff that went wrong from a lot of sitting in less time than that truck was... expensive, to say the least.

One of the big problems with Fe's is water leaks at the corner of the manifolds. Its because the block decks are not square so the heads are not square As much as .025 out (Good old quality control) When you build them its important to square deck the block and that issue goes away. I did many in the old days. So keep an eye on the corners and watch for water in the oil. Also the hydraulic rockers had no adjustment Push rods are available in + and minus lengths for that reason.
