    素有素營養
    豆腐乾炒素麪
    材料:
    油麪1斤
    鹵水豆腐乾2件
    雜菇適量
    紅蘿蔔適量
    芹菜適量
    蔥適量
    處理:
    1. 油麪,放大碗內,加入大滾水,淥一淥,擎乾水,清水沖洗乾淨,再擎乾水。
    2. 豆腐乾,清水洗乾淨,切條。
    3. 菇類,有需要的話,就切幼條。
    4. 油麪,放大碗內,加入調味料:
    a. 素食蠔油1湯匙
    b. 生抽半湯匙
    c. 老抽1/4湯匙
    d. 糖半湯匙
    撈勻。
    烹調:
    1. 大火在鑊內煲滾清水1升半。
    2. 加入鹽半茶匙及油1茶匙。
    3. 菇類及豆腐乾,放鑊內,大火滾起,擎乾水。
    4. 菇類及油麪,放鑊內,加入清水100毫升,撈勻,大火滾起。
    5. 加入其餘配料,攪勻。
    6. 完成,上碟,可享用。

    Ingredients:
    Yellow noodles 1 catty
    Marinated dried soybean curd 2 Nos.
    Mixed vegetables appropriate amount
    Carrot appropriate amount
    Celery appropriate amount
    Green onion appropriate amount
    Preparation:
    1. The yellow noodles, put in a big bowl. Add in boiled-up water, soak for a few seconds. Drain. Rinse thoroughly. Drain again.
    2. The dried soybean curd, rinse thoroughly. Shred it.
    3. The mushrooms, thinly shred if necessary.
    4. The noodles, put in a big bowl. Add seasoning:
    a. Vegetarian oyster sauce 1 tbsp
    b. Light soya sauce 0.5 tbsp
    c. Dark soya sauce 1/4 tbsp
    d. Sugar 0.5 tbsp
    Mix well.
    Steps:
    1. Heat up 1.5L of water at high flame in wok.
    2. Add in 0.5 tsp of salt and 1 tsp of oil.
    3. Put mushrooms and the soybean curd in the wok. Heat up at high flame. Drain.
    4. The mushrooms and noodles, are to be put in the wok. Add in 100ml of water, mix well. Heat up at high flame.
    5. Add in the remaining ingredients, stir well.
    6. Complete. Put on plate. Serve.
    It's not costly. It's easy. It is veggie but nutritional. Family dishes are easy to prepare.
