We raise our own lamb and sometimes slaughter early. I like to watch these muntjac videos for a reference on them. Works better than trying to butcher them like a full size lamb.

I just made braised venison shanks a couple days ago, you really cant get any better meat than wild caught meat.
Do you ever core the bone out and cut in to steaks?
