I’ve made this a few times it’s my new go to and my family love it. It’s so good I’ve made it for company too! And I’m not a fish person so that’s high praise from me! I do add a little bacon which I cook in the pan before the roux, I like the saltiness it adds. And I add a mirepoix to get some veggies in there.

I use cod and smoked haddock which gives a smokiness to it. I always make too much sauce just in case. My tip, after you pour the sauce and mix, I then put a layer of raw spinach over which stops the potato melting into the sauce.

Adding aged cheddar and double cream makes the casserole a winner. Thank you for your brief and easy to follow video. This is very similair to my recipe too, using a mix of salmon , prawns and naturally smoked white fish adds a extra dimension to it.
I tried a slightly different version using a mix of potato and sweet potato mash and not smoked fish, and a slightly curried sauce for the fish , I poached it in some stock plus some /curry powder, chilli and spices (not too much) then added some crème fraisce. I though it might be crap but it was really good served with some green beans.

If I can offer a small tip - rather than make a plain white sauce, turn it into a Bechamel. Into the milk, a couple of hours or more before you will want to use it, add an onion, peeled, and halved. Stick about 6 cloves into the onion, and put in the milk with a couple of Bay Leaves, and 6 - 10 black pepper corns. Bring to a simmer, for 5 mins or so, then put aside to cool and absorb. The herb flavours enrich the final produce enormously. Most do not use them in the final sauce, but remover before adding the flavoured milk to the roux. However, I leave them through the entire process, removing when the pie is put together, to get maximum flavour addition.

Amazing. but im going to leave the fish skin on. Im a maverick! I like to add a tad of mustard powder and a smidgen of grated nutmeg and freshly chopped parsley into the sauce and skip the cheese. only putting the cheese on the top. Serve with petti pois peas and sliced tomato.

Much prefer a gratin topping of grated Emmenthal cheese and panko breadcrumbs mixed together rather than mash. It gives a great crunchy topping and texture to an otherwise smooth and creamy dish.
