The games lose something when changing them that way. I rather like to play good, old pixelated Doom than the modern upscaled mods. And I do believe that good old pixel art Minecraft had something going for it.

I prefer to stick to 16x16 textures, still with GI shaders. I find voxels are a style in the same way pixel art is, but both could be closer to a medium. I feel the style of Minecraft is beyond blocks, so when blocks or even just a grid are kept when fidelity goes through the roof, it feels surface level. Getting rid of blocks wouldn't be right, so I feel it's stuck at 16x16 for me, rethinking voxels all the way though.
Shaders are imo the single most game changing thing there is available to vanilla players. Id die without my adorable blocky Complimentary reimagined clouds
