    After many years of over-complicating cooking, I've come to find uncomplicated dishes like this to be fail-proof and satisfying. However, this presentation showed more experience and finesse than I usually accomplish.
    Tip: Buy a good paring knife and buy bone-in chicken thighs, exclusively. Once you get the hang of processing the thighs you save a ton of money, get much more flavor, and can boil the bones into a rich stock, saving money when you buy it and when you add the home made bone stock.
    Also, don't think of potatoes as unhealthy. They are awesome root VEGETABLES, and no one in their right mind doesn't find them delicious.

      INGREDIENTS
      2 Tbs vegetable oil
      2lb. Chicken thighs, skinless and boneless, cut into bite size
      1/2 Tsp Cumin seeds
      1/2 Tsp Fennel sedds
      1/4 Tsp Thyme, dry
      1/2 Tsp Paprika
      Pinch red pepper flakes ( optional )
      1 Yellow onion, ,peeled and sliced medium size
      3 Yukon gold, peeled and cut into small bite size cubes
      1 Tbs Garlic, chopped
      1/4 C Cilantro, chopped for cooking and garnishing

    Chef, I enjoyed your simple dialogue without any fluff, no endless showing of unnecessary visuals and a recipe that seems so doable.     I made this for dinner last night with a side salad and it was absolutely delicious. The spice/herb combination wasn't one I would have thought of myself but it was a truly wonderful mix.
    The sweetness of the fennel seeds and the earthiness of the cumin seeds along with the subtle floral note that the thyme brings really struck a lovely balance. The squeeze of lemon at the end and chopped cilantro added a ton of brightness, complimented by the heat lent by the ground paprika and red pepper flakes. I'll definitely be making this again and will be looking further into Kenyan cuisine from now on with this guy as my first professor.. Thanks Chef!
    Edit: I made this a second and then third time. I love this chicken/onion/potato preparation, i intend to keep it in my rotation and I hope you do too.

    Just made this recipe today. Excellent, coming from a salt only person.
    Used 4 thighs and halved the spices.
    Cooking for 1 now.
    Love the gef inspired dish, in one pan, suitable for a family or 1.
    LOVED IT.

      Hi @neisha, so the cumin and fennel combination worked together? I never thought of that combination. I put cumin in just about everything I cook. Another nice combination is fennel and coriander especially on fish.

    I did it for mother’s day today in France. It took me a bit longer to heat. The meat is delicious. Next time I will separate meat from potatoes as I am more used to serve this way. Thank you for this very enjoyable dish with flavours I am not used to.

    Fried potatoes and onions have been a good side in my family for decades. Adding chicken directly was never thought of. I added Stubbs chicken seasoning instead of cilantro, it was devious! Thank you!

    Hey Chef, I cooked this dish last night for dinner, I made it at lunch time, I kept the chicken and onion separate from the pan fried potatoes, I reheated the chicken and while the potatoes were frying up again in my wok, I mixed them together and served them with chopped coriander. Delicious 10/10 we both loved the flavour, will definitely have it again, cheers from Devon in UK🍷🍷

    I came across this video a few days ago, and I could not stop thinking about making it. I cook tons of different cuisines and am very comfortable and confident in my skills. I followed this recipe exactly (but I used chicken breast cubes instead because that was all I had on hand), and all I can say is that I am absolutely HOOKED. I love the spice, the flavor of the fennel seeds, the aroma of the cilantro, and the perfectly cooked potato bites. I’ve never made a Kenyan dish before and this recipe had me press the “follow” button REAL QUICK. THANK YOU FOR SHARING YOUR CULTURE WITH US!
