  • We're grilling up a Wagyu/Angus tenderstrip, also known as Teres Major, on the PK grill. The #1 steak machine! Using a great steak rub with coffee, cocoa and chipotle chili. This combo is a winner for sure!

i'm not a big fan of reverse searing, so i never even considered doing it with this cut of beef. so happy i watched this though, as reverse searing appears to give a much more even cook with those smaller tapered ends. thank you!

How do you like the Fireboard 2? I have the original and love it.

The mic quality is much better than normal but it picks up a tad extra ambient sounds around you. Great video as always though and im extremely excited you got more of your rubs back out to purchase! I'll be buying some for me and my friends.
Also how did you like that charcoal? It happens to be the same charcoal I buy normally.

Travis Napier Thanks! Good to hear. Still tweaking sound, good that it is improving. The charcoal is good, will be using it more.

The audio quality is much better now! However, there should be some preferenses in your editing program where you can boost the mic output and balance it with the background music. As always, a really nice video!
About the cooking... Wouldn't it be better to put the thick part of the meat closer to the heat than the opposite, to get it evenly cooked? :)

Tommy Terkansson Thanks! I will tweak sound/music levels in future videos. As for placing the thicker part of the meat closer: tricky, considering the thickest part is in the middle 😄. It turned out good anyways, and I only had it on indirect heat for 20-ish minutes.

What the name of that song in the background? I like it. Perfect balance.

Thanks! Don’t really remember, it’s a clip from the RUclips sound library that can be used in videos.

    Hank:
The music is MUCH louder than your voice. Too loud, really. You are soft-spoken and the music is blasting. Just saying. As always, your cooks.

Know what's better than ANY steak rub? Salt and white pepper. Keep it simple and let beef taste like fucking beef. 😔
