Wagyu Teres Major Steak | Goldens' Cast Iron Cooker | Heath Riles BBQ

  • I’m cooking up a “poor man’s filet” today. What most people probably don’t know is this is also called a Teres Major Steak. They come from the shoulder blade on the chuck end of the cow. I’m going to season it up and throw it on my Goldens’ Cast Iron Cooker for a tasty crust and a juicy, delicious flavor.     INGREDIENTS:
    • Wagyu Teres Major
    • Heath Riles BBQ Cajun Creole Garlic Butter Rub
    • Heath Riles BBQ Garlic Butter Rub
    • Olive Oil
    • Salt
    DIRECTIONS:
    1. Set up your grill for a 2 zone fire, we used the Goldens' Cast Iron for this cook. Our temperature we were shooting for was 450º-500º.
    2. Coat meat with olive oil and lightly season with kosher salt if you wish.
    3. We seasoned one piece of meat with our Cajun Creole Garlic Butter Rub and one with Garlic Butter Rub.
    4. Place meat on the grill and sear until your internal temperature is 120º. We had about an 8 minute cook time.
    5. Rest meat for 8-10 minutes, we lightly covered the meat with foil while resting.
    6. ENJOY!

    Beautiful. Your garlic butter is a regular in my competition steak arsenal. Creole will probably make an appearance soon. That color was beautiful.

    They call these shoulder tender steaks from my part of the country. Very good cut at med rare!

    I get those from snake river farms, and they are my favorite cut. IMO its the best cut out of the cow

    The teres major is probably the most underrated cut. And super cheap for wagyu! I’d take them over a tenderloin any day.

    For 8 minutes cooking it's really not even worth firing up the charcoal grill for, right? Easier to sear those in a cast iron skilllet and let your rub seasoning magic follow through with some awesome flavoring to be remembered by all... !
