  • The classic chicken Cordon blue is made by wrapping ham and cheese in seasoned chicken breast with black pepper, garlic powder, paprika and then again coating with all purpose flour, egg and with bread crumbs. It is later baked or deep fried. Chicken Cordon Bleu with White Sauce is very tasty and people from all over the world like this dish. The juiciness of the chicken, added with the sweetness of the ham and the creaminess of the cheese makes this dish melt in your mouth. Chicken cordon bleu is adapted from the French cuisine wherein ham and Swiss cheese is wrapped in chicken meat and is made into a roll and was deep fried.

    INGREDIENTS
    FOR THE CORDON BLEU
    3 pieces chicken breast
    ½ teaspoon salt
    ½ teaspoon ground pepper
    ½ teaspoon garlic powder
    ½ teaspoon paprika powder
    ham slices
    cheese slices
    1 cup all-purpose flour
    eggs
    breadcrumbs
    oil for frying
    FOR THE WHITE SAUCE
    2 tablespoon Butter
    2 teaspoon all-purpose flour
    1 cup evaporated milk
    Salt and pepper to taste
    DIRECTIONS
    HOW TO COOK THE CHICKEN CORDON BLEU
    Slit the chicken breast in half to make it thinner. Lay the chicken breast in a plastic wrap and then fold to wrap the chicken breast. Pound to flatten. Season with ½ teaspoon salt, ½ teaspoon ground black pepper, ½ teaspoon garlic powder and ½ teaspoon paprika powder.
    Lay ham slices into the seasoned chicken breast. Then, lay the cheese slices. Roll and wrap the chicken with the ham and cheese. Use the plastic wrap to carefully roll the cordon bleu. After rolling into a log-form shape, wrap with plastic wrap. Secure the ends while rolling. Chill the cordon bleu for 30 minutes.
    Prepare three plates. On the first plate, add 1 cup all-purpose flour. On the second plate, add the eggs, season with salt, pepper and paprika powder and then scramble. On the third plate, add the breadcrumbs.
    Coat the chilled chicken cordon bleu in flour, eggs and breadcrumbs. Repeat this process for the rest of the cordon bleu pieces.
    Fry in a preheated oil under low to medium heat for 5-7 minutes each side or bake at 200C for 25 minutes.
    Let it rest for 15 minutes before cutting.
    HOW TO COOK THE WHITE SAUCE
    Melt butter in a pan under low heat. Then, add the all-purpose flour. Stir and cook for 3 to 5 minutes until the flour is cooked.
    Then, add the evaporated milk small amount at a time while stirring. Make sure that there’s no lumps. Let it boil using low heat until thick and creamy
    Once the white sauce turns thicker, season with salt and pepper to taste. Mix well and set aside.
    Serve the chicken cordon bleu with the white sauce. Enjoy!

    Cordon bleu:
    Chicken breast fillet (flatten)
    1/2tsp salt
    1/2tsp ground pepper
    1/2tsp garlic powder
    1/2 tsp paprika
    Cooked ham
    Cheese
    (Roll and wrap and chill for 30mins)
    1C all purpose flour
    1C bread crumbs
    2eggs
    1/2 salt,
    1/2pepper
    1/2 paprika
    (beat and mix well)
    (Cook 7mins each side, cool for 15mins before cutting)
    Sauce:
    2Tbsp butter (melt low heat)
    2Tbsp all purpose flour
    1C evaporated milk
    Season with salt and pepper

    i tried this using bacon and its so good. the ham might be better becoz bacon doesnt seem to fit the consistency. the white sauce is also good. its so easy to make.

    Elevate that sauce with a tiny bit of Dijon mustard, cognac, and maybe a shallot. The roll up and chill technique seems pretty legit. I'll be making this soon. I may stuff it with crispy prosciutto or black forest ham. For the cheese emmentaler, swiss, gouda hmm something that melts well.
