Pepper steak with FRENCH PEPPER SAUCE

- Ingredients (approximately 4 portions):
✔️ tenderloin 600 gr / 21 oz
✔️ peppercorn 40 gr / 1.4 oz
✔️ cognac 20 ml / 0.7 fl oz
✔️ dry white wine or madere 50 ml / 1.7 fl oz
✔️ concentrated meat stock 250 ml (if you have non-concentrated stock, add 1 tablespoon of startch)
✔️ fat cream 60 ml / 2 fl oz
✔️ butter 20 gr / 0.7 oz
✔️ salt

True. Learning to make sauces has changed my life, just like Chef V said. Today cooking is an adventure, not a chore. Making my own stocks and sauces, getting the most out of the meats and veggies that I buy, costs less and tastes so much better than buying processed factory-made food.
