My first full time job after high school was in a store that was next door to a fish market. At lunchtime we would get fish & chips from the fish market, made while you waited. It was so good! That fish market is gone now & I've never again had fish & chips as good.
I love whiting fish, it was hard to find when I was in GA for a while, but now I can get it and two friends have bought me some. I love it. I use the same thing, but I can't use tartar sause, it give me indigestion sometimes. But I have to have my hot sauce.

Here in California we get fresh rockfish and lingcod. If I'm not catching it in the ocean myself, I'm getting it at a fish market on the coast or at my local Costco. Firm, flaky, buttery and not fishy at all. I usually cook it like you did but with Italian breadcrumbs. Definitely going to try your recipie! The sandwich is a great idea😋
Oh yeah, whiting fish was a staple in my family's household growing up. We usually had it on Fridays and that Crisco was poppin'! I bought some a couple weeks ago and will try your recipe as I know ahead of time it's gonna be so delicious. Your meal brings back wonderful childhood memories. TFS!
