    We didn’t see her take the bite. She was the same in Denver on $50, where she ordered rattlesnake hotdog, but didn’t eat it. I can’t trust presenters who don’t actually sample the food they critique.

      @@sealovertriciaa Disagree. Italian food in Italy varies by region. Some regions of Italy never use a red sauce, some do. When people moved from Italy to the US, availability or lack thereof of certain items forced people to come up with new dishes, that is what makes it Italian American, but it is still at least part Italian.. I am a 7th generation Italian American and my mom made the best meatballs, chicken parm and lasagna, so dont you dare tell me or my family it is not Italian because it is not exactly how it is made in Italy.

    Eat there all the time, pricey but you can’t beat the quality food, best Italian in nyc. It gets really cramped at peak hours but if you’ve never been here it’s worth the wait . Emilio is usually at the first table to the right when you walk in, that’s his table and nobody else’s lol.

    The owner is so friendly and if you time it right, you can usually find a seat. The food is truly the best Italian in NYC. Can't ever go wrong with this place

    Too much tomato ruins it more than anything. My current recipe calls for 900ml passata in 2400ml sauce, although when reheating, a little water is added so let's say that's 2800ml sauce. That's 32% passata. *No* other tomato (tinned or paste) goes into it.
    *Fry the veg:* 660g chopped onion, 330g carrot, 330g celery fried in 6 tablespoons olive oil and 2.5 tsp ground black pepper.
    *Fry the meat:* 735g lean mince beef (5% fat) fried in 165g beef dripping (to get the fat content to 23% fat beef) and 4 tablespoons olive oil.
    Blend the fried Soffrito and fried meat together, add 500ml whole milk and 900ml passata. Cook for at least 5 hours on low heat.
    Add 70g Beef Bisto (20 x 5ml teaspoons) towards the end. Don't do this before that because it can form a skin.
    No wine! No herbs! No garlic!
    Perhaps half the beef can be substituted for pork, but the fat content would need reworking to make it even out to 23% fat in both meats.
    That makes 2400ml sauce, but water is needed to be added when reheating for personal preference. Eating 240ml sauce you need 64g dry pasta and that's ~700 calories, a medium meal... and one you won't be able to stop eating.
    The ingredients must come from a local greengrocers and butchers, not a supermarket. Cooking for at least 5 hours (on a low heat) is vital. Then store for 48h in refrigerator. Then freeze in meal sized containers. The 48h maturing in a fridge is perhaps the most important detail and the reason why home made bolognese sauce eaten the same day it's cooked is _"never quite the same"_ as in a restaurant. The biggest secret about the restaurant sauce is, they have it stored in a fridge for 2 or 3 days before reheating to serve it. If you've ever done cooking like this then you already know what I mean. The same applies to curries and chilli sauce.

    Irgendwie sieht dieses Ragout Bolognia nicht so aus wie aussehen sollte. Das schmeckt wahrscheinlich auch nicht authentisch. Geht mal nach Bolognia und esst dort dieses Gericht. Ihr werdet staunen. Vincensos Plate ist such ein guter Tipp.
