A lot of her outplay is mechanically inclined so it requires tons of practice.
I've seen some insane combos these people pull out of nowhere

Thanks for that ! As a beginner it's very nice to have a guideline to follow without too much thinking while being sure it's not just plainly bad
Little question though: I hear here and there that attack speed is not that good on Caitlyn, but this build (also #1 on opgg for Emerald+) goes Statikk + RFC which both have really good attack speed bonus, and that confused me a bit: if AS isn't that good on Caitlyn, why items with good AS are so good on her...
I'm beginner not even lvl 30 so my understanding is quite low, but this just seems paradoxal to me to read "AS not good on Cait" and having a super build with AS items

The items are good because they also add attack damage. Getting attack speed is nice, but getting items that only or mainly provide attack speed (runaans hurricane, rageblade, etc) is terrible
