good luck on your journey but i have one tip, this tip mainly focuses on scripting but definitely can help with everything else and is also the way i learnt scripting, the best way, in my opinion, to learn scripting is to start off with learning the fundamentals then building on them by making smaller games and progressively increasing the size of the game until you become proficient with scritping.
for scripting I think a good start is a VERY SIMPLE (just the main function) of a tycoon type thing. I'm not saying make your own game by any means, I'm saying to basically learn to script a leaderstats with a currency, learn touch events for buttons, and learn how to modify properties of elements to make the part visible.
Simple but fun: UI/SCRIPTING make a ui with a nice multi coloured gradient border with a growin and a smooth gradient anamation followed by lile a text in the centre sorta like a currency holder and every like idk click it goes up by idk 1 then when it does it has a anamtion were it sorta pop up and has like a nice rainbow gradient text stroke when it pops out Good luck in this if you do!
Try make UI that can move when cursor on it, and try make your own RoAnimation bundle! Doesnt have to be on Roblox Marketplace. Could just be on your game.

IMO It's definitely better not to have to rely on a ton of other people when making your game. However, I find it more fun/motivating to learn new things when building an actual game. You should take one of your simple game ideas and start building it from scratch. Everything it needs, you learn.
Scripting: Create a floating platform with a lever on it When the player pulls the lever the platform will start spinning slowly at the same time 200 random objects like spheres cubes and wedges will begin to rain down from above in random colors and sizes as the objects fall they will emit random sounds from a list of 50 different sounds each time an object hits the platform it will change the platform color to a random color from 20 different colors once all the 200 objects have hit the platform the game's skybox will change to a new random skybox from a selection of 5 different skyboxes after this make a series of fireworks which go around the platform/map for a duration of 30 seconds and when the fireworks are finished add a "print("I did this because of a random guy from youtube !!!!!")
animate a rocket launcher reloading or script a gun speed ( if you hold a light weight gun like a pistol, you run faster than if you are carrying a sniper or lmg)
Scripting: Advanced pathfinding AI. It should be able to detect what kills and dont touch that, get to any destination, complete basic obby, etc. Sounds easy enough.
Roblox calls their employees "builders" now rather than "robloxians". This is because they want to focus on how many at Roblox build/create inside the company, and outside. Most of the work at Roblox is building/making. So, with that in mind, "RoBuilder" has a different meaning. We are all builders. :)
Scripting: Learn how to use module scripts effectively. Side challenge would be to learn how to use the collection service as well. Extremely useful for making multiple parts that have a functionality using a single script instead of copying and pasting the same script over and over again. Also speeds up the workflow if you need to change how the script works saving a ton of time. They can sometimes sound hard, but they are actually pretty easy to understand once you start using them. They are extremely useful in the future as well when you want to make frameworks are even maybe a simple script that is more organized and readable. I only started truly using them near the end of last year, but that's just because I was afraid it was going to hard to learn them and now I use them for almost everything. I actually have pretty severe dyslexia and ye it makes scripting a lot more challenging to learn. When to capitalize what words mostly and when not to, but you eventually learn that roblox just uses a certain structure for that. Even now I still get confused with that sometimes.
Make an apple that you can feed to other players/npc’s that gives them health could be cool and you would need a UI for your inventory an Animation for “feeding” them the apple and the Script that brings it all together
UI: Clean custom proximity prompts with a nice smooth script when you hold down to interact. This will cleanly do open a door of your choosing
That’s mostly scripting, there is really no ui involved
The proximity prompt has all of this when added in game, maybe also include something it triggers with and animation? Or opens a new ui?
