GATEAUX BANANE... Mauritian food cooked by my Mauritian mum.

  • How to make gateaux banane. A nice sweet snack made with over ripe bananas goes nice with a cup of tea, normally the cakes are served room temperature.
    Ingredients: plain flour
    3 very ripe bananas
    Baking powder
    Fine fennel seeds
    Drop of milk
    Oil to fry
    Instructions: crush the bananas with a fork, then add the flour. My mum put two spoons but in the end she adapted the mixture so put 4/5 tablespoons, add 1/2 teaspoon of baking powder. Mix it altogether and add a sprinkle of fennel seeds and mix into a thick batter.
    Use a spoon to spoon the batter in the saucepan at a medium heat and keep turning the balls until brown in colour. Take out and place on a kitchen roll to remove excess oil. Cool down and eat! Bon appetite. From Lina.
