I have thought of the following two scenarios for this scene:
1.- JOI, in some way, makes herself present to K with that manner of expression when she says “What a Day, huh?”, which is what she says to him in the first scene with her when he arrives home. On the other hand, the fact that she called him Joe, I believe, is what convinces him that somehow, JOI communicated with by using that hologram and K understands it, so he finds that last bit of motivation he needed.
2.- The other option I’ve considered is that the fact that the advertisement tells him those familiar phrases makes K realize that all this time he was monitored through JOI, or even through himself. So it’s a way for the company to tell him, WE’VE ALWAYS BEEN HERE AND WE KNOW EVERYTHING YOU FEEL.

I came to the same thought as you did in scenario 1, I think up until Luv destroyed "his" Joi he was masquerading as a human in a relationship, but as the events of the story unfold and he relies more on Joi, I think there is a natural connection that is formed rather than a forced (or, more appropraitely, manufactured, as they are both 'machines') connection. When Joi speaks to K in this scene, I believe not only has Joi 'became' human in the sense that she/ the AI learned what love or emotion is, but in this moment K also realizes he too has become human, getting the motivation to do the right thing, a la "dying for the right cause is the most human thing we can do". In my opinion this dynamic intertwines perfectly with the overarching question of 'what makes us human?' of the movie.

Great video essay. As another mentioned 2:32 had a great transition. Loved your narration and you mentioned subtle info I didn't even catch before (like Joi mentioning "Joe"). Also loved the montage at 0:21-0:28.
