Saladin was left untouched for quite a while when I did this mission. However, he fell easily once I set his castle on fire. First I picked off his ranged units from towers on the side I intended to attack with fire ballistas, then I moved in 5~ flame trowers next to the walls. Then I ordered them to attack over the walls and his castle was burning entirely within a few seconds. Fire ballistas are very unreliable for setting things on fire, more often the building just gets destroyed before it even starts burning so now I use these fire throwers instead for that task because the building will be set on fire immediately if one of the fireballs lands on it lol.

Smashing Saladin before he can get established was a wise move. No harder AI to crack than a fattened Saladin.
bro i dont have arabian archers at the beginning i only got like 18 archers
Go to settings, set up identity and choose the arabian lord!
