Equipments
-Camera: Fuji X -T3
Apple cinnamon buns
50g butter
3.5dl milk
11g yeast
52g sugar
500g flour
7g ground cardamom
7 g of salt
Melt butter and milk in a little sauce pan and cool to about 42°C or whatever your dry yeast likes
Mix in yeast
Combine butter and milk mixture with the cardamom, sugar and salt in the mixing bowl
Add flour little by little and knead for 10 minutes
Leave the dough to rest under a tea towel for about 1 hour aiming to get to doubled in size.
Once the dough has doubled in size, shape it into round buns, just like you would with regular bread rolls.
Let them proof for another 30-40 minutes.
Make the apple filling:
3 large apples
1 /3 cup brown sugar
1 tsp cinnamon
half of the lemon juice
1/4 cup melted butter
2 tbsp cornstarch dissolved in 3 tbsp water
Streusel Topping
5 tbsp butter partially melted1/2 cup all-purpose flour
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
Combine all the filling ingredients with the sliced apples and mix until apples soften and the mixture thickens.
Heat in the microwave stirring occasionally until the brown sugar syrup thickens and apples soften, about 2 minutes.
Mix together the streusel topping ingredients in a bowl until it comes together in big crumbs.
Once your bun looks good, press a dent into each bun, pressing it up the sides to creating a hole for the filling.
Fill it with the apple filling
Add big spoonfuls of apple pie filling into the cavity of each buns
Top with a handful of streusel topping
Bake at 200°C for 10 to 15 minutes, or until the edges begin to turn golden.
Finnish Salmon Soup Recipe:
Ingredients:
Unsalted butter
1 leek, sliced
1 white onion
5 cups of fishstock
4-5 medium size potatoes
4 carrots
450 g of salmon fillet, deboned, de skinned and cut into small chunks
250ml food cream, heavy cream
fresh dill
salt and pepper to taste
-Melt the butter in a pot, add the leaks and onions, saute until translucent
-Add the stock, potatoes and carrots and bring to boil until potatoes are almost cooked
-Add the salmon chunks and the heavy cream and cook for another 5-7 minutes
-Add fresh dill, salt and pepper to taste
-Serve with warm bread
-Enjoy!

I’m so impressed with the grocery stores in Finland. They look so clean and the abundance and quality of the produce is remarkable. So many choices for cheese and yogurt, etc. They seem better than anyplace I shop in the US.
Sweden is the same. I feel the quality is better and you don't have to buy large quantities - many of the items can be purchased individually like the cucumbers. I wish our standards were higher in the US ...
I live in the States. Yes, the grocery store looks like our grocery stores in Germany. I miss the variety of healthy food especially fresh produce. Did you see the prices too? People in the States like to believe that only the prices went up in the States. Which is not the case.

Hi Jen, I’m enjoying fall with my garden. I live in France, in a house and I’m m going to clean my little garden, clean all the flower pots. I want a tidy garden for winter without mess. Then I’m going to tidy my shoe cupboard… but I’s easier for me because I’m retired so I have time it’s not the same for you, I remember when I worked 2 years ago, when the seasons changed I was in a hurry… take care Jen and keep smiling. 😊💕🍁

Thank you for this lovely video, love when you take us shopping for home items and food also. Your recipes are so delightful and give me great warmth thinking of making them also in our Autumn weather. Also thank you for that book referral too. I’ve been buying, not making desserts for pumpkin now that the weather is getting cooler and cooking heartier meals. I love this time of year and cooking different meals on our cooler days. And of course doing a lot of walking, as love to walk and the leaves falling, something peaceful. I too have been taking my winter coats to be cleaned and preparing myself and will changeover my closet soon, but in Canada, where I live it is still very warm and sunny, with the odd day of rain.

I tried that salmon soup recipe, but with celery (that's how you showed it before) and it's now one of our favorite soups. It's really easy and delicious. I also cooked the steak and mash and asparagus meal that you showed in another video. Love your recipes.

I’m currently reading Liane Moriarty’s new book “Here One Minute”. Here’s the plot line: mysterious woman boards a flight and tells each passenger when they’re going to die and of what. The book is about 500 pages long but worth the read. I love apple filled baked goods in the fall. Over the weekend I’m making an apple cake that has cream cheese in it. It gets moister the longer it sits. Have a great weekend!
