Here in the States, we almost never cook or serve prawns or shrimp with their heads on. We cook crawfish whole, but not prawns. I've never understood that. As shrimp & prawn heads contain flavorful juices, so that can enhance the taste of any sauces or broths. It’s like some folks cook with butter, some with seed oil, others with olive oil😁

No, I haven't. The heads are usually gone even before they show up at the market here. Crawfish and lobster are always cooked and served whole, though. I'll try cooking whole prawns sometime if I get the chance.
