You can change the callsign by changing the registration or callsign in simbrief. N251SB is the standard simbrief aircraft registration if you don't enter a custom one. Hope this helps!

Did you set your call sign in Simbrief? That usually helps avoid the default ones at least with the current default ATC

Im pretty sure you can tune the frequencies just by clicking them on BATC. I think your callsign is set in the MFS menu before spawning in.
That's a pretty normal taxi speed for real life Ryanair flights. They're always in a hurry to get airborne 🤣

You can change the call sign BeyondATC calls you by changing it in Simbrief.
Vatsim could have full coverage
I believe it takes your callsign from simbrief so whatever you have in there will automatically use
