  • Palak Paneer Recipe
    Ingredients-
    500 gm Spinach | पालक
    Water for Boiling | उबलने के लिए पानी
    1/2 Inch Ginger | अदरक
    3-4 No. Green Chilli | हरी मिर्च
    Handful Fresh Coriander Leaves with stems | ताजा धनिया पत्ती तने सहित
    3 Tbsp Oil | तेल
    250 gm Fresh Cottage Cheese | पनीर
    2 No. Bay Leaves | तेज़ पत्ता
    1 Black Cardamom | काली इलाइची
    2 No. Cloves | लौंग
    5-6 No. Black Pepper Cons | काली मिर्च साबुत
    1 Tsp Cumin | जीरा
    1 Tsp (Finely Chopped) Ginger | अदरक
    1 Tsp (Finely Chopped) Garlic | लहसुन
    1 No. (Finely Chopped) Green Chilli | हरी मिर्च
    1 Large (Chopped) Onion | प्याज
    1/4 Tsp Turmeric Powder | हल्दी पाउडर
    2 Tsp Coriander Powder | धनिया पाउडर
    2 Small (Pureed) Tomatoes | टमाटर
    1/2 Tbsp Salt (As per Taste) | नमक स्वाद अनुसार
    1/4 Tsp Garam Masala Powder | गरम मसाला
    1/2 Tbsp Dry Fenugreek Leave | कसूरी मेथी
    1 Tbsp Clarified Butter | देसी घी
    1-2 (Thinly Sliced) Garlic Clov | लहसुन की कली
    1 Tsp (Garnish) Fresh Cream | ताज़ा मलाई
    Method -
    Add spinach in a bowl of water and wash it well 2-3 times or until water comes clean
    Boil some water in a pan and add all the washed spinach in it for blanching
    Blanch the spinach in boiling water only for 20-30 seconds
    Keep the bowl of ice cold water ready and immediately dunk the strained spinach into it
    When blanched, transfer the spinach into a blender
    Add half inch ginger and few green chillis
    Also add a handful of fresh coriander leaves with its stems, coriander stems give a very good and fresh flavour
    Blend it smooth into a puree, if you think it is very dry you can add 1 or 2 ice cubes while blending
    Now heat a pan or a kadhai and add some oil
    Add the diced cubes of cottage cheese into oil and let them fry until it gets some color in it
    When brown strain them out carefully
    Repeat the process with all the cottage cheese as shown
    After frying the cottage cheese, keep it aside
    Heat a skillet or same kadhai and add the same leftover oil in it
    When the oil is hot, add few whole spices like bay leaf, black cardamom, cloves, black pepper cons and let them release their aromas for few seconds
    Now add cumin seeds and let it crackle
    Add finely chopped ginger, garlic and let it cook on a low heat for a minute
    Also add chopped green chilli but it's completely optional
    Now add chopped onions and let it cook on medium heat while stirring occasionally
    Cook the onions until pink and translucent, we don't need to cook until golden
    Keep stirring occasionally, this will take around 3-4 minutes to cook onions properly
    When onions sweat properly, lower the heat and add turmeric powder and coriander powder and stir well
    You can also add red chilli powder here but it's optional, I'm not adding it
    Now when the rawness of turmeric is gone, add tomato puree and salt to taste and stir well
    Now cover the lid and let the masala cook for 3-4 minutes on medium heat
    Keep stirring occasionally by opening the lid once in between, if you feel the masala has become dry, add some hot water, stir and cover the lid again
    Cook the masala until it starts to separate the oil from the sides
    When the oil starts to separate, add all the prepared spinach puree into the masala
    Stir everything well and let the spinach cook on medium to low heat for 15-20 minutes
    Keep stirring occasionally while scraping the sides of the pan
    Whenever you feel that it has become dry, add some hot water and stir well and let it cook
    Now add garam masala powder and stir well
    Add the fried cottage cheese cubes and dry fenugreek leaves rubbed between your palms as shown and stir everything well
    Now let's prepare a tempering for palak paneer
    Heat a tadka pan and add clarified butter
    When hot, add sliced garlic and let it sizzle
    Temper the garlic till it starts to catch some color and become crispy
    Immediately add the tempering into prepared palak paneer and stir lightly
    Your delicious Palak Paneer is ready to be served
    Serve hot with some Roti/Nan/Missi Roti/Rice
    Garnish it with some fresh cream and some more crispy garlic slices
