I think Mastodon have even more diversity and evolution than Opeth have. They went from sludge doom to Progressive/psychedelic country metal to pop rock, they have so many styles but without losing their trademark sound. You should check out more songs from their masterpiece Crack The Skye,which is an album that contains only great songs, including 2 prog you have reacted to Oblivion from this album.
Eh, I think it's debatable who evolved more between Mastodon and Opeth, but I think it's a stretch to say they ever went into "country metal" or "pop rock." Certainly their more recent stuff is more accessible, but it's more a middle ground between metal and mainstream hard rock, not pop rock. They occasionally have licks that have a country influence, but not entire songs or albums. I will give you the proggy/psychedelic stuff, especially on Blood Mountain and Crack the Skye. FWIW I'm not the biggest fan of Crack the Skye, though I know many people love it. To me, that's the album where Mastodon went TOO prog and lost much of what made their earlier work so special/unique. I think Blood Mountain is the best mix of their proggressive styles and heavy/aggressive styles.
I remember hearing Mastodon for the first time when they played March of the Fire Ants from this first album on some late night music video channel. I remember thinking back then they sounded like something special. Not many bands had their combination of heaviness, density, complexity, but also (relatively) accessible groove. I think their next album (Leviathan) really established them as one of the elite metal bands, while the album after saw them experimenting with more progressive tendencies. Their recent albums have seen them "evolve" towards a more accessible middle-grounds between rock and metal. I still think they're releasing quality work, but I don't think they've ever quite recaptured the magic of those first three albums (some would include their 4th album, Crack the Skye in that, but I was never thrilled with that one). Anyway, this track is a good example of how that first album sounds. It was as heavy/aggressive and groovy as they ever got. If there's one knock against the first album it's that it's rather rough and unrefined, but I also think that contributes a lot to its power. Much of the album is like this song in the respect that most are rather short but also very dense in terms of having a lot of content/changes within a short amount of time. There still aren't many songs that are so short but so intense as Crusher Destroyer (which opens the album).
For some strange reason the first album never really clicked for me until a day I forced me to go through the entire thing in one sitting, and the band just explodes the chart in this record hahaha is just so wild, seeing the diference in the feels between the harsh, heavy doom-ish and the more pop-prog lightly is just so good.

The whole album Remission is one of my favorite albums, extremely heavy stuff and a lot different from how Mastodon sounds now. They also got a lot more popular recently. I think around 2014 was when they really started topping charts and getting radio play, and they already had 5 albums released before that. I first got into them 2009-ish because their song Colony Of Birchmen kept appearing in video games I played.
If you want answers to anything involving "why" just know, they did LOTS of acid. They love to create odd but amazing music that doesn't fit into normal formats and structures. And don't feel bad about not knowing about them, I discovered them browsing the CD bins at a store in '05 and seen the album cover for "Blood Mountain" and decided to try it.

I would suggest Hearts Alive off of Leviathan. Great songwriting and some of the most memorable riffs in my opinion
