    Tried this tonight. Awesome. Kids gave me 9.5 out of ten. Beautifully cooked pork, caramelised fennel and the bean were strangely delicious with cheddar and white wine and some chili anchovies.

    This doesn’t work that well with ordinary supermarket fennel, which probably needs blanching, or even separate cooking. Particularly if your joint of pork is smaller than this one. Even with stripping off the outside leaves, the fennel cooked this way was unacceptably tough and stringy.

      I cooked it tonight with huge winter fennel. Just fry the stalks longer to soften and cut quite thin less than a cm. It was great.

      No it won't. Resting the meat is essential to retain the juices and a joint that size will also retain the heat for well over an hour, maybe even two.

      @@canastraroyal well I’m a chef and so is Jamie, so I think we have more expertise in this than you do. If you were a chef you’d know this, and resting for half the cook time is standard. In fact you can rest a whole turkey for several hours and it’s still retains heat. Not piping hot but still warm. The gravy for a turkey heats it back up, but for a dish like this one, 30 mins rest is perfect and the center of the pork will still be piping hot. Go do some research or formal training before making uneducated sweeping statements.
