Anyone on here remember lemon meringue pie at school in the 70s? Pretty sure that was just lemon curd on a pastry base topped with meringue. Ah man. Heaven. 🤣👍

I love them both. I did find here in Northumberland a few months ago a Rhurbarb curd in a farm shop. That was amazing. I have made Lemon curd many times its very easy to make. You should try making your own x

A few recipes apart from the original tart a victoria sponge with a butter cream and added lemon curd/cheese top the cake with icing sugar to add sweetness. If you have an ice-cream maker add either, with a little lemon zest to enjoy a fresh lemon ice-cream. The small tarts you constructed with the raspberries. You could pipe some Italian meringue on to the top, then either place under the grill or salamander until golden brown, or if you have a blowtorch brown some of the meringue. My mother and grandmother always insisted on lemon cheese to this day l don't know why.😮

I was thinking the little lemon cheese tarts, pipe a meringue top with a star nozzle, then use a chef's blowtorch to just brown the meringue. Mini lemon meringue pies. Here in the UK we have the National Trust, who look after stately homes and places of national importance. In their shops at the properties they used to sell jars of coffee curd. It was delicious, but they don't sell it any more. I am so disappointed.
@@FinnLovesFood I have found a recipe for coffee curd, so I may have a go at making it sometime. The chocolate cherry curd sounds good. May be quite nice spread in the middle of a chocolate cake with whipped cream, like a black forest gateau type cake.

Best way to have lemon or any curd is on buttered toast, my favourite breakfast 😊 or homemade muffins filled inside with lemon curd 😉
