Dom't worry about overmixing, it'll just shift the texture towards that of a hot dog, can't go wrong with this one!
Especially with the cheese mixed in, I doubt it's easy to ruin the texture

I’ve made these before after finding burger dogs at a convenience store. However, I shaped and cooked the dogs separately. Less greasy of a dish
That makes sense to me. He didn't mention anything about getting the leanest beef which I'm sure this recipe needs. But even at that, I was surprised there was no apparent grease under the buns. I don't trust it. I like your idea better.

@@Sketcher93 The one issue is that you'd miss out on the bun getting steamed by the cooking burger and onions (a la white castle), and some of that contrast in textures on the bun
But yeah I would imagine using really fatty ground beef could make it problematic

I'd do it separately and toast the inside of the bun on a pan where I previously cooked some onion with oil (removing the onions and leaving some of the oil).

As a kid, one of my local convenience stores sold something for a bit called the "Big Ugly" it was a ground cheeseburger in the shape of a hot dog on a hot dog bun. 7 year old me was mind-blown. I loved them. These look like a much tastier version of them. 😋

This could also be adapted into doing a meatball sub ‘burger style’ - use American cheese, then add meatballs and top with diced pickles, onions, mustard, ketchup (or a ‘burger sauce’)

I made with fancy whole wheat buns and as long as you put a lot of butter, it comes out nice and toasty.
I was thinking “White Castle” before you said it! (When ordering White Castles, remember to ask them to trim the whiskers & tuck the tail)
What does that do? There's a White Castle out here, but it wasn't good. Pretty sure there's only one, which is just as well. I made them on my own before because my husband missed it.
@@gohawks3571 it’s a joke on what peoole in my region call White Castles: rat burgers. I still love them. Ran a motorcycle charity ride once to raise money for the Crohn’s and Colitis Foundation of America, stopping and eating at all 19 White Castles in my home state. That was… heroic.
Most other people call them “sliders.” AFAIK, that;s where the term for a small burger came from.

This recipe had me at the green onions or "scallions" for our culinary, highbrow friends. Yum!!
oh man, nice and simple. I could even make single or two/threes (half portion) for myself. As someone who lives by myself and sometimes ant to have sorta snacky food but making a nice portion I can heat up the day after at least as well.
Nifty way to sorta portion the burger eating while containing the toppings nice and snug in the bread.

If you put a rack on the bottom of the pan juices will not touch the bun and the whole bun will crisp up. Good job, as always, Chef John.

Hard to believe that the exposed bread didn't turn to brick in the time it took to cook the beef. Juices I guess. If you want to go FULL rebel, my recipe is very similar to Chef John's for the beef, but then I actually wrap it around a beef wiener and do them over charcoal. The kids love them. Pro Tip: you are going to need bigger buns 😉

Regarding the sogginess, should we be using 80/20 or 90/10 ground beef? I would normally use 80/20 for a burger, but here the amount of render has me hesitant.
