This looks off the chuffing charts DJ, definitely going to give this a crack, nice idea with the tumeric, good thing about a curry once you have the spices you can make various dishes at a reasonable cost, i used to hate ginger, canny do with out it now.

Indian here, we use a few more spices. Ground Coriander, Garum Masala. And use chicken thighs on the bone. Have to say if I was served that up, would be very happy to try it and it looks authentic. Would be even nicer with lamb on the bone, with the marrow adding extra flavour.

Looks good. Nice to see a RUclipsr eat something other than chicken tikka masala or korma, I think only you and Gary eats have the balls to eat spicy food.
It definitely needs 3 onions cooked very slow with ginger and garlic and then once they are properly cooked out then add the dry spices and cook them out to give a deep flavour then add the chicken and the spices will soak right into the meat then add the tomato paste and cook that out to sweeten it then if you are using chicken breast definitely add chicken stock so it replicates meat on the bone flavour now cook covered for hours the remove the lid if you want your sauce thicker, this method is the same for any curry I have never heard of a curry without onions

As you say "Hundreds of different versions of Chicken Madras". What however is the common characteristic of all of these versions that enable them to be called Chicken Madras ? I have asked this question quite often on different channels but have never received and answer.
Nice , love taste of madras but as on old git can’t take heat anymore so I add a bit of coconut milk to dilute it slightly but retain the full flavour .especially good with lamb and a few okra .

Looks lovely that Darren👌🏼 Would you consider doing a review on the spice n tice curry kit? Its basically 3 curry kits Vindaloo, phaal and Carolina reaper. They are supposed to be really tasty from the videos ive seen. Heat wise i reckon you could handle it no problem 👌🏼
The base of all curries requires onions too DJ. Do what you did, but in your oil, add 2-3 cardamom pods, a stick of cinnamon, a couple of cloves and a few peppercorns. It flavours the oil. Then add chopped onions and brown the hell out of them slowly. Add your ginger and garlic after and tinned or fresh tomatoes instead of puree. Omit the curry powder and add some garam masala if nothing else. The onions make a huge difference. Meat on the bone gives more flavour too. But if you dont like bones, then use thigh meat for more flavour. You could also just ask your butcher to give you some chicken bones if you dont like it on the bone. Chuck them in just for flavour and then remove them at the end.
Quality ingredients cost. Esp in London. If I'm gonna spend an hour in the kitchen cooking, then I wanna make sure I'm using quality. Not sure bout the rest of u.

I suppose if you accidentally tipped over a whole bowl of red hot chillies (or two), it becomes a PHALL? 😆 Truly amazing recipe... Uncle Ben's Rice would do the trick but we cannot use that name now I guess as the whole world has gone mad. These days I just microwave frozen rice and peas available from major supermarkets. Rice should not take your time.
