- New Orleans native Charlie Andrews demonstrates how to make New Orleans style Praline popcorn. This combines popcorn with New Orleans pecan candy. We pop the popcorn using a manual hand crank popcorn maker, then we make Pecan candy, coat the popcorn with the pecan candy and bake it. From there it's placed in an airtight container to make the popcorn and coating crunchy and crispy. This recipe calls for 2 servings, but recipe can be doubled to serve more. It's perfect for the holidays like Christmas and it's absolutely delicious. Hope you all will give this recipe a try.

Once I get a whirley pop I'll be trying this because this looks amazing...also, I just have to say this.... Charlie, your videos are timeless man! 7yrs ago you made a video on how to make New Orleans gumbo and my wife n I are natives that no longer live in New Orleans, post Katrina. We miss home cooking more than you can imagine and no family lives close enough to where we are to cook it for us. So last month we attempted our first batch of gumbo with your help. And (in my new orleans accent) BABY LET ME TELL YA....just know we got requested to make gumbo for our church after that and we are making that pot as we speak. All that to say, thank you so much for all that you do and helping bring "home" around the world. You are truly a staple of New Orleans in our book. Keep it up!

You're welcome. There are different type of popcorn kernels. Some are different colors as well. Popcorn comes in two basic shapes -butterfly and mushroom. Butterfly popcorn has a very irregular shape with large bumps. It has a light crispy texture but can break easily. The mushroom-shaped popcorn is round with a rough surface.

I have been using a Whirley-Pop for some years, and you’re right, put it into an airtight container immediately and that popcorn will stay fresh for days.

Your recipes are amazing, I love pralines and would buy some by a new Orleans native when I would visit my mom in new Orleans for the summer. But after I enlisted and went overseas I couldn't get them anymore! My favorite pralines have always been the creamy ones, I made your recipe for pralines and almost fell out they were so good!! I brought them in and my co workers loved them! So I get to share a little piece of new Orleans with other people! I actually studied to find the butterfly kind - it's orville Rettenbotter or something like that ... I think all other kinds of popcorn contain more mushroom kernels be default so just don't use orvilles
Mushroom popcorn - is a popcorn shaped like a mushroom when popped, the texture is sturdy on the outside but soft in the middle, able to handle coating like caramel, toffee, candies, etc without breaking apart. Happy Holidays to you as well. You're welcome, not a problem.
