The roof line is one area where doing it right can actually save you money. Mcmansion roof lines tend to be extremely complicated with loads of different pitches and valleys. If you design the house right you will more likely simplify the roof design you will likely have a simple hipped roof or two gables instead of a dozen.
There is a great book called "Get Your House Right" that covers some of these things and more. Beware though, you will start noticing lots more bad design.
I believe interior designs became easier to sell than exteriors, and architects learned that's what got them work. How else to explain why they'd allow ugly dormers that betrayed their training? Granted, sometimes change is done just for change's sake.
